    freeze potatoes?

    We usually have a big garden, and have a lot of nice potatoes left this spring.
    Wonder if we could shred them and freeze them?Should we cook them first, I know they turn dark in a hurry if fresh. Hate to see them got to waste. Please, anyone have any ideas out there? I can't find anything about this in my freezer cookbook. Hope someone has an idea.

    You can freeze mashed potatoes. Go to the Bulletin Board search box and put in Freezer Mashed Potatoes and I bet you'll find some recipes. I'm just not sure how long the "use-by" time should be, but I'd guess not longer than 3 months. Usually food doesn't "go bad" in the freezer, it just starts to degrade or get unappealing attributes.

    You can make your own hash browns by baking your potatoes about 3/4 the way done, then shredding and freezing them.

    My freezer book says you can freeze potatoes but you first have to cook till not quite done, then freeze.

    thanks girls!!!Think I will try it in between the 12 piano lessons. My kids say,"it will keep you young,mom,plus breadfast is my favorite meal to cook,and theirs to eat!!!Even they are all married.
