    Lemon-Filled Pastries

    1 3/4 cups all-purpose flour
    2 tablespoons granulated sugar
    1/8 teaspoon salt
    2/3 cup chilled butter -- cut into small pieces
    2 to 3 tablespoons ice water
    Filling:
    1 egg
    2 egg yolks
    1/3 cup granulated sugar
    3 tablespoons butter -- softened
    1/3 cup fresh lemon juice
    3 teaspoons grated lemon peel
    1/2 teaspoon lemon extract
    Garnish:
    1 tablespoon confectioners' sugar

    In a medium bowl, mix together flour, sugar, and salt. Using a pastry blender or 2 knives, cut butter into flour mixture until coarse crumbs form. Add water, 1 tablespoon at a time, tossing with a fork until a soft dough forms. Divide dough in half. Shape each dough half into a disk, wrap in plastic wrap, and chill for 1 hour. To prepare filing, in a small saucepan, beat together egg, egg yolks, sugar, and butter until blended and smooth. Stir in lemon juice, peel, and extract. Cook over low heat, stirring, until thickened slightly, 5 minutes. Chill, stirring occasionally, until thickened, 30 minutes.

    Preheat oven to 375'. Grease eight 2-in. square or decorative tartlet pans. Dust with flour; tap out excess. On a floured surface, using a floured rolling pin, roll 1 dough half into a 12-in. x 6-in. rectangle. Cut dough into eight 3-in. squares; press into prepared tartlet pans. Spoon filling into each pastry shell. Roll remaining dough half into a 12-in. x 6-in. rectangle. Cut dough into eight 3-in. squares. Place squares over filling; pinch edges together to seal. Place tartlet pans on a baking sheet. Bake pastries until golden, 15 to 20 minutes. Transfer baking sheet to a wire rack to cool completely. Dust pastries lightly with confectioners' sugar before serving.
