    TASTE OF THE SOUTH'S BURRITO CASSEROLE RECIPE

    Hi everyone,

    I've been visiting this BB for a few weeks and LOVE it! You guys are great. Anyway, here's my first "contribution". The recipe came for the newest TASTE OF THE SOUTH magazine. I made it last night and it was awesome!

    1 (10.25 oz.) can beef gravy
    1 (10 oz.) can enchilada sauce
    1&1/2 # ground chuck
    1 envelope taco seasoning mix
    1 cup water
    2 (16oz.) cans refried beans
    10 to 12 flour tortillas
    1 8oz. sour cream
    1 8oz. grated cheddar
    Garnish: salsa, lettuce, chopped tomato, sliced green onion

    Preheat oven to 350. In a small bowl, combine gravy and enchilada sauce and set aside. Brown grond meat in a large skillet, dri\ain well. Add taco seasoning and water and continue to cook until liquid has been absorbed (5-10 minutes). Add refried beans to meat mixture and stir well.

    Line a greased 9x13 baking dish with 1/3 of the tortillas. Spread half of the meat and bean mixture over tortillas, and top with half the sour cream. Repeat layers, ending with the final third of tortillas. Pour gravy mixture over casserole and top with grated cheese. Bake for 30-45 minutes or until hot and bubbly. Let sit 10 minutes before serving.

    To serve, cut in squares and top with your favorite toppings.

    (the next time I make this I will probably use two cans of enchilada sauce instead of one sauce and the beef gravy. Also, I'm thinking it wouldn't hurt to put some grated cheese in between the layers too).

    Thank you, so much, for your first "contribution". It sounds like a winner! I love mexican/tex-mex dishes, and I know there are alot of others here that do, too.

    Thank you for your pointers, as well. This is going to the top of my to-try soon pile.

    Pepsi, you're right! I will keep posting more Taste of the South yummies! FYI, everyone, I nuked some of the leftover for dinner tonight and it was every bit as good (almost better) than last night!!

    Thanks for sharing this delicious sounding recipe. I love Tex-Mex too. Can't get enough Southern recipes.

    If I didn't already have all the magazines I need at my age, I would check into subscribing, but I am overflowing with magazines now. I need to give some away. LOL.

    Does sound good...did you mean that next time you would omit completely the gravy and use only the enchilada sauce? somehow that sounds good to me...omitting the gravy. I will surely save this, and thanks for sharing.
