Fresh Tomato Bisque

    Fresh Tomato Bisque

    Ingredients:
    2 pounds ripe tomatoes
    1 med onion, sliced thin
    1 Tbs butter
    1 bay leaf
    1 heaping tablespoon of brown sugar
    2 whole cloves garlic
    1 tsp. salt 1/2 tsppepper
    2 tsp finely chopped fresh basil
    1 pt. light cream
    1 cup milk
    6 large croutons
    butter chopped chives

    Seed and skin the tomato. Saute the onion in the butter. Add the tomatoes, bay leaf sugar,salt and pepper and basil and cloves.
    Simmer stirring occasionally for 25 minutes, remove the bay leaf and cloves. Puree. Add the cream and milk. Serve with a toasted and buttered croutons sprinkle with chopped chives~Janie~

    This sounds excellent :)

    Tomato bisque is my all time favorite, only I used Campbell's soup & milk.

    LOL. I have used many, many cans of Campbell's myself. To add a little texture rough chop some of the tomatoes and add to the soup.( Do not puree all of the tomatoes)

    Thank-you, this looks terrific Janie. So many soups, so little time...lol. I think I'll just eat soup from now on.
