    Casserole Recipes II - add your favorits!

    Potato Crust Casserole
    Serves 4

    1 pound hamburger
    1 (14 1/2 ounce) can stewed tomatoes with garlic and onion
    1 (14 1/2 ounce) can green beans, drained
    3 cups mashed potatoes
    1 1/2 cups Cheddar cheese, shredded

    Brown beef in a 2-quart pan. Salt and pepper to taste. Drain. Add drained green beans and undrained tomatoes. Simmer slowly for 15 minutes.

    Add 1 cup of cheese. Place meat mixture in casserole dish. Arrange potatoes on top, sprinkle on remaining cheese. Bake at 350 degrees F until cheese melts and potatoes begin to brown slightly, about 25 minutes.

    Chicken Noodle Casserole

    1 cooked, de-boned chicken
    1 package egg noodles, cooked
    2 cups grated cheese
    1 can cream of mushroom soup

    Mix noodles and mushroom soup together. Place half in greased baking dish. Lay chicken on top of noodles. Add 1 cup cheese over thicken. Place remaining noodles on top. Top with remaining cheese. Bake at 350 degrees F until cheese is melted.

    Vidalia Onion Casserole

    5 large onions (Vidalia, if possible)
    1/2 cup (1 stick) margarine
    Parmesan cheese
    Crispy buttery crackers

    Peel and slice onions into thin rings. Sauté in margarine until limp or opaque. Pour half of onions into 1 1/2-quart casserole. Cover with Parmesan cheese, then crushed crackers. Repeat layers and bake uncovered in 325 degree F oven until golden brown, about 30 minutes.

    Eggplant Dressing
    This sounds weird but is delicious, a sum greater than its parts.

    1 large eggplant
    1 finely chopped small onion
    1 chopped hardboiled egg
    1 or 2 pieces of left-over cornbread
    Butter

    Optional Step: Peel and slice eggplant. Sprinkle both sides of slices lightly with salt, place in colander and let stand about 30 minutes. Wipe with damp paper towel or rinse and dry. Cut slices into cubes. Some very mature eggplants are a bit bitter; this removes that taste.

    Cook peeled cubed eggplant in a little water until just tender. Drain, saving water. Mix with onion, egg and cornbread. Moisten with eggplant water. Dot with a little butter. Put in buttered casserole and bake uncovered in 350 degree F oven until brown, about 30 minutes.

    Serve hot with butter or gravy.

    Serves 4 to 6.

    Creamed Corn Casserole

    5 cans creamed corn
    5 eggs
    3/4 cup milk
    1 box very fine bread crumbs, divided
    Salt and pepper to taste

    Mix eggs and milk. Pour into a very large casserole dish. Add creamed corn and 3/4 of the bread crumbs. Stir well. Top with other 1/4 of bread crumbs and dot with lots of butter chunks.

    Bake at 325 degrees F for about 1 1/2 hours. Check periodically so that it does not dry out.

    Spinach and Egg Casserole

    1 (10 ounce) box frozen chopped spinach
    1 (15 ounce) can Cheddar cheese soup
    1 tablespoon mustard
    1/2 pound deli ham, cut into 1/4-inch cubes
    4 hardboiled eggs, chopped or sliced

    Preheat oven to 350 degrees F.

    In large saucepan, cook spinach according to package direction; drain well. Stir in soup, mustard and ham. Pour into a 9-inch square baking pan. Top with eggs. Bake 15 to 20 minutes or until heated through.

    Tuna Casserole

    2 cups cooked noodles
    1 can flaked tuna, drained
    1 can condensed mushroom soup, thinned with 1/4 cup water
    1 cup cooked frozen peas
    Buttered bread, cornflake crumbs or cracker crumbs or chips

    Combine first four ingredients. Put into a greased casserole dish. Top with buttered bread, cornflake crumbs or cracker crumbs. Bake at 450 degrees F until top is brown, 20 to 25 minutes.

    Makes 4 servings.

    Easy Crabmeat Casserole

    1 pound fresh lump crabmeat
    4 ounces cream cheese, cubed
    4 ounces shredded Cheddar cheese
    1/4 cup milk
    2 ounces sherry

    Mix all ingredients and put into a 2-quart glass casserole dish. Bake at 350 degrees F for about 35 minutes.

    Yields 4 to 6 servings.

    Sausage Jumble

    1 pound smoked sausage
    1 (10 ounce) package frozen cauliflower
    2 tomatoes, cut into wedges
    1/2 teaspoon salt
    1/4 teaspoon oregano
    4 ounces grated Swiss or Cheddar cheese

    Cut sausage into 2-inch chunks. Arrange in shallow casserole along with cauliflower and tomatoes. Sprinkle with seasonings. Bake at 350 degrees F for 25 to 30 minutes.

    Sprinkle with cheese. Return to oven just until cheese melts.

    Chile Relleno Casserole

    1 (4 ounce) can green chiles, chopped
    1/2 pound Cheddar cheese, grated
    1/2 pound Monterey jack cheese, grated
    1 can evaporated milk
    2 eggs, beaten

    Layer an oblong baking dish with 2/3 jack cheese and 2/3 Cheddar cheese.

    Mix chiles, eggs and milk. Pour over cheese. Top with remaining cheese. Bake for 1 hour at 350 degrees F or until brown on top.

    Wake up Casserole

    2 cups seasoned croutons
    1 cup shredded Cheddar Cheese
    1 4oz. can mushrooms, drained
    1 ½ pounds sausage browned
    ½ cup chopped onion
    6 eggs
    2 ½ cups milk divided
    ½ teaspoon, each salt, pepper, dry mustard
    1 can cream of mushroom soup

    Place croutons in greased 9x13 pan. Top with cheese and mushrooms.

    Brown sausage in onion, drain, and place over cheese.

    Beat eggs, 2 cups milk, and seasonings, pour over sausage.

    Cover and refrigerate overnight. Mix soup with ½ cup milk

    And spread on top. Bake at 325 for 1 hour. Serves 8

    Chili Frito Casserole

    1 large package Fritos (about 4 to 5 cups)
    2 large onions, peeled and chopped
    1 pound American cheese, grated
    4 cups leftover or canned chili

    Place about a third of the Fritos in the bottom of a 2-quart casserole dish. Spread on half the chili, onions and cheese in layers. Repeat the layers, ending with Fritos. Bake at 350 degrees F for about half an hour until browned and bubbling in the center. Serve hot.

    Pizza Casserole

    1 pound rotelle pasta
    2 cans pizza sauce
    1 package stick pepperoni (unsliced)
    2 (12 ounce) packages shredded mozzarella cheese
    1 small can mushrooms, drained well

    Cook rotelle according to package directions. Drain.

    Dice the pepperoni. Mix mushrooms and pepperoni into the pasta.

    In large casserole dish or 13 x 9-inch pan place a layer of pizza sauce, a layer of pasta mixture and a layer of cheese. Repeat until all ingredients are used. Bake at 375 degrees F for 20 minutes or until bubbly.

    Serves 6.

    Pork and Potato Scallop

    4 pork chops
    1 can cream of mushroom soup
    1/2 cup sour cream
    1/4 cup water
    2 tablespoons parsley, chopped
    4 cups potatoes, thinly sliced
    Salt and pepper to taste

    Fry pork chops until brown; set aside.

    In a small bowl; combine soup, sour cream, water and parsley. Alternate layers of potatoes seasoned with salt, pepper and then sauce. Place pork chops on top. Bake in preheated 375 degree F oven for 1 1/4 hours.

    Makes 4 servings.

    Black-Eyed Pea Casserole

    Serves 4.

    1 1/2 pounds ground beef
    2 cans black-eyed peas
    2 cans Ro-Tel tomatoes with green chiles
    1 1/2 cups cooked rice
    Shredded cheese, your choice

    Brown ground beef; drain.

    Layer ingredients in large casserole dish, starting with meat mixture, then following with cheese layer. Continue layers, ending with cheese. Bake at 350 degrees F for 30 minutes, until thoroughly heated. Let stand for 5 minutes before serving.

    NOTE: Use regular stewed tomatoes if you want a less spicy dish.
