    Bringing Home Baby Carrots

    Carrots cooked in apple juice and honey are a tasty, sweet accompaniment to the chicken casserole. Of course, I used baby carrots in this recipe for my theme menu. The word does double duty in the title for this dish. -Ame Andrews, Little Rock, Arkansas

    INGREDIENTS
    1 package (16 ounces) fresh baby carrots

    1 cup apple juice

    3/4 cup water

    1/3 cup honey

    SERVINGS 4

    METHOD Other stovetop

    PREP 10 min.

    COOK 10 min.

    TOTAL 20 min.

    DIRECTIONS
    In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer for 10-14 minutes or until carrots are tender. Serve with a slotted spoon. Yield: 4 servings.

    Rock-A-Bye Baby Punch

    INGREDIENTS
    3 quarts raspberry sherbet, softened
    6 liters ginger ale, chilled

    SERVINGS 64
    CATEGORY Beverages
    PREP 10 min.
    TOTAL 10 min.

    DIRECTIONS
    Just before serving, place sherbet in punch bowl. Add ginger ale; stir until sherbet is almost melted. Yield: about 2 gallons (about 64 half-cup servings).

    INGREDIENTS
    14 pounds ground beef
    1 can (50 ounces) condensed tomato soup, undiluted
    2 cans (14-1/2 ounces each) diced tomatoes, drained
    2-1/2 cups barbecue sauce
    3/4 cup grape jelly
    2 tablespoons each garlic powder, onion powder and chili powder
    2 teaspoons pepper
    1/2 teaspoon ground mustard
    4-1/2 to 5-1/2 dozen sandwich buns, split

    SERVINGS 54-66
    CATEGORY Sandwich
    PREP 5 min.
    COOK 25 min.
    TOTAL 30 min.

    DIRECTIONS
    In two large Dutch ovens or soup kettles, cook beef over medium heat until no longer pink; drain. Combine the tomato soup, tomatoes, barbecue sauce, jelly, garlic powder, onion powder, chili powder, pepper and mustard; stir half into each pan. Cook over medium heat for 15 minutes or until thickened and heated through. Serve on buns. Yield: 54-66 servings

    Green Bean Bundles of Joy

    To make green beans fit the new baby theme dinner, I baked them in little bundles, secured with strips of bacon. A few minutes under the broiler makes the bacon crispy. The dish gets its tang from Italian dressing, which the beans are baked in. -Ame Andrews, Little Rock, Arkansas

    INGREDIENTS
    6 cups water
    1/2 pound fresh green beans, trimmed
    4 to 6 bacon strips
    3/4 cup Italian salad dressing


    SERVINGS 4-6

    METHOD Microwave
    PREP 30 min.
    COOK 5 min.
    TOTAL 35 min.

    DIRECTIONS
    In a saucepan, bring water to a boil. Add beans; cover and cook for 3 minutes. Drain and set aside. Cut bacon in half lengthwise; place on a microwave-safe plate. Microwave on high for 2-1/2 to 3 minutes or until edges curl. Place four or five beans on each bacon strip; wrap bacon around beans and tie in a knot.
    Place bundles in an 8-in. square baking dish. Drizzle with salad dressing. Bake, uncovered, at 350° for 10-15 minutes or until beans are crisp-tender. Broil 4 in. from the heat for 2-3 minutes or until bacon is crisp. Yield: 4-6 servings.

    I assured my friend that she didn't have to wait to try one of these scrumptious brownies until she got up in the middle of the night to feed the baby! But the chocolaty treats are a perfect pick-me-up (anytime) for new parents short on sleep and energy. -Ame Andrews, Little Rock, Arkansas

    INGREDIENTS
    1-1/3 cups all-purpose flour
    1-1/4 cups sugar
    1/2 cup baking cocoa
    1 teaspoon baking powder
    1/2 teaspoon salt
    4 eggs, beaten
    3/4 cup butter or margarine, melted
    1/2 cup each milk chocolate chips, semisweet chocolate chips and vanilla or white chips
    3 Snickers candy bars (2.07 ounces each), cut into 1/4-inch pieces

    SERVINGS 24
    CATEGORY Dessert
    METHOD Baked
    PREP 10 min.
    COOK 25 min.
    TOTAL 35 min.

    DIRECTIONS
    In a bowl, combine the flour, sugar, cocoa, baking powder and salt. Combine the eggs and butter; add to the dry ingredients and mix well. Stir in chips.
    Transfer to a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Immediately sprinkle with candy bar pieces. Cool on a wire rack. Cut into bars. Yield: 2 dozen.

    Dirty Diapers


    1 pound ground beef
    1 small onion, finely chopped
    2 (10 ounce) cans refrigerated crescent roll dough
    8 slices Cheddar cheese
    32 Dill pickle chips

    Preheat the oven to 350 degrees F (175 degrees C). Place the ground beef in a skillet over medium-high heat. Cook, stirring to crumble, until no longer pink. Add the onion to the skillet; cook and stir until tender. Drain off grease. Unroll the crescent roll dough on a clean surface. Separate the triangles and then cut each triangle in half diagonally to make 2 smaller triangles.
    Stack the slices of cheese and cut diagonally into 4 triangles. Place one triangle of cheese onto each triangle of dough. Spoon about a tablespoon of ground beef over the cheese and then top with a slice of pickle. Fold the points of the dough towards the center like a diaper and place on a baking sheet. Bake for 10 to 15 minutes in the preheated oven, until golden brown
