    ISO recipes for brunch and crockpot

    I'm planning a brunch once a month and need some simple ideas. I will be doing this by myself and just need some simple recipes. This month I'm doing a quick bread of cinnamon swirl bread and it turned out wonderfully. I'm estimating about 10-15 women, probably less, so I made 4 loaves of this. But, I was also wondering about stuff in the crockpot in the future, like crockpot scrambled eggs? Has anyone done this or do they dry out too much? And how many eggs do I fix for 10-15 women??? Thanks so much for any help and any recipes!! I don't want anything messy, but just something small and quick (like quick breads).

    Ham'n Taters Breakfast Casserole

    1 lb. frozen tater tots
    1/2 lb. diced ham
    1/2 cup chopped onion
    1/2 cup green pepper diced
    3/4 cup shredded cheddar
    6 eggs
    1/2 cup milk

    In crockpot, layer ingredients in order:
    tater tots, ham, onions, green pepper and cheese. Repeat twice more , ending
    with cheese.

    In a bowl, beat eggs and milk. Salt and pepper to taste. Pour mixture over
    layers in crockpot.
    Cover and cook on LOW for 10-12 hours. Serves six.

    CROCKPOT WESTERN OMELETTE CASSEROLE
    32 ouncees hash browns, frozen
    1 pound ham, extra lean, cooked and cubed
    1 medium onion diced
    1 medium green bell pepper, diced
    1 1/2 cups Monterey Jack Cheese, shredded
    12 eggs
    1 cup milk, skim
    1 tsp salt
    1 tsp black pepper, or to taste
    Place a layer of frozen potatoes on the bottom of the crock pot,
    followed by a layer of ham, then onions, green peppers and
    cheese. Repeat the layering process two or three times, ending
    with a layer of cheese. Beat the eggs, milk and salt & pepper
    together. Pour over the mixture inside the crockpot, cover
    and turn on low. Cook for 10-12 hours, overnight, and enjoy
    for breakfast or brunch the next day.

    CROCKPOT APPLE COCONUT CRISPS
    4 large Granny Smith apples, peeled & coarsely sliced (about 4 cups)
    1/2 cup sweetened flaked coconut
    1 tablespoon flour
    1/3 cup brown sugar
    1/2 cup butterscotch or caramel ice cream topping (fat-free is fine)
    1/2 teaspoon cinnamon
    1/3 cup flour
    1/2 cup quick rolled oats
    2 tablespoons butter or margarine
    In a casserole 1 1/2-quart baking dish that fits in the crockpot,
    combine apples with coconut, 1 tablespoon flour, 1/3 cup brown
    sugar, and cinnamon. Drizzle with the ice cream topping.
    Combine remaining ingredients in a small bowl with a fork
    or pastry cutter and sprinkle over apple mixture. Cover and
    cook on high for 2 1/2 to 3 hours, until apples are tender. Serve
    warm with vanilla ice cream or whipped topping

    Slow cookers can make quick work of breakfast. What could be better than waking up to the fresh aroma of a hearty morning meal wafting through the house? With aid of a Crockpot, it’s easy to give the entire family a hot breakfast, regardless of when they drag themselves out of bed.

    The process couldn’t be easier; in fact you might even be able to get the kids to help. Layer a few ingredients into the slow cooker before you hit the sack the night before, cover and turn on low, and in the morning breakfast is magically ready!


    Crockpot Western Omelet Casserole
    1 bag (32 oz.) frozen hash brown potatoes
    1 lb. of bacon diced, cooked and drained
    OR
    1 lb. cooked ham, cubed
    1 med. diced onion
    1 green bell pepper diced
    1 ½ C shredded cheddar or Monterey Jack cheese
    1 dozen eggs
    1 C milk
    1 tsp. salt
    1 tsp. pepper (more or less to taste)

    Serves 12

    Crockpot Sausage & Egg Casserole

    1 dozen beaten eggs
    14 slices of bread
    2 1/4 C milk (lowfat or skim is OK)
    2 1/2 C grated cheddar or Monterey Jack cheese
    1 lb. sausage, cooked and drained
    ½ tsp. salt
    1 tsp. pepper (more or less to taste)
    2 tsp. mustard, optional

    Grease the sides of the crock with butter.

    If desired, spread mustard on one side of the bread and cut bread into large squares. Make layers in the Crockpot of bread, followed by sausage, followed by cheese, ending with a cheese layer. Beat eggs, milk, salt and pepper together. Pour over Crockpot mixture, cover and turn on low. Cook for 8-12 hours.



    Southwestern Style Sausage, Egg & Cheese Breakfast Casserole

    18 eggs
    1 small can green Ortega chilis
    1 lb. cooked breakfast sausage
    2 ½ C grated Monterey Jack or Pepper Jack cheese
    1 med. onion, diced
    1 green pepper, diced
    1 tsp. butter

    Grease crock with butter. Starting with sausage, layer meat, chilis, onions, peppers and cheese, repeating the layering process until all ingredients are used and ending with a layer of cheese. Beat eggs, then pour over mixture in the slow cooker. Cover and turn on low. Cook for 7-8 hours.

    Serve with sour cream or fresh salsa.

    Deluxe Crockpot Oatmeal

    2 C milk
    1/4 C brown sugar
    1 T butter, melted
    1/4 tsp. salt
    1/2 tsp. cinnamon
    1 C quick cooking oats
    1 C finely chopped apple
    1/2 C raisins and/or dates
    1/2 C chopped walnuts or almonds
    Makes 4 Cups (6-8 servings)

    Grease the inside of Crockpot. Put ingredients inside Crockpot and mix well. Cover and turn on low heat. Cook overnight or 8-9 hours. Stir before serving.

    Slowcooker Breakfast Cobbler
    Apples and granola flavored with honey and cinnamon.

    This recipe is from Table Talk by Mimi Wilson and Mary Beth Lagerborg, authors of Once A Month Cooking.

    4 medium-sized apples, peeled and sliced
    1/4 cup honey
    1 tsp cinnamon
    2 tablespoons butter, melted
    2 cups granola cereal
    Place apples in slow cooker and mix in remaining ingredients. Cover and cook on low 7-9 hours (overnight) or on high 2-3 hours. Serve with milk.

    Yield: 4 servings

    Word of Caution ~~

    Before a I serve a crockpot recipe, I always try it first. There is such a variation in:

    High & Low temperatures, especially with older & newer crockpots - slowcookers. You can change the timing to match your crockpot brand and age.
