I love the Nordic Ware jelly roll pans for cookie sheets, I am not a fan of airbake pans.  I have some of those and am going to sell them.  What is even better is that Nordic Ware is made right here in Mpls, Mn.  So it is a product made in the USA!!!  I do like them alot!!

Hands down----Doughmakers. I gave away all my other cookie sheets after I bought Doughmakers. They are aluminum and come in different sizes. I love them.

    Re: Cookie Sheets

I was always under the impression that a true cookie sheet did not have any sides at all.  Most of what has been described here has the typical 1/2" (approximately) side all the way around.  I remember reading that the best ones had no sides so the air could circulate more freely around the dough.

    What do you think?

I use the ones with no sides.  My favorite is the large Wilton cookie sheet with the one raised side for handling.  It is 14x20 and fairly heavy duty.  I usually find them at Michael's or Hobby Lobby here.

I agree with Grelo, now that I have  a convection oven.  I can put 3 pans in at once.I really liked my stone , but you can't do 3 pans at a time in a convection oven, and if you're making a lot of cookies, it also takes too long for them to cool, before putting more cookies on them.

Cookie sheets should not have sides, and the Doughmakers do not have sides. I really love the way their pans perform. I just wish they were easier to find.

I have been using Doughmakers and just love them. You don't have to grease them at all and they come clean very easy.

Was 33 years ago my mother-in-law gave me 2 stainless steel cookie sheets from Sears. They still are shiney and look new yet. Had an aunt give me air bake ones and I gave them to goodwill. Did not like them at all. Shiney makes excellant cookies! Never grease them and can use parchment paper too.

    Re: Cookie Sheets

I have Baker's Secret brand.  They aren't the best and aren't as good as the ones recommended by others who have posted here, but I have a bunch of them and will keep them until they wear out and die.  I do, however, have a good hint to share - I used to use parchment paper, but it slipped back and forth when I removed sheets from the oven.  For that reason, I tried some of the Reynolds "Quick Release" foil that I had, covering the cookie sheets with that.  Works great!  It doesn't move like parchment, cookies remove easily, and it makes them brown nicely without burning.
