    Amish Canning Recipes

    These recipes are from a Amish canning book that I have

    Amish Grape Butter

    5 c concord grapes
    5 c sugar

    Wash grapes & remove stems. Place fruit & sugar in large kettle & bring to a low boil for 20 minutes. Put through a large sieve. Ladle into hot sterilized jars & seal.

    Amish Strawberry Jam

    8 c strawberries, crushed
    5 c sugar
    2 T lemon juice

    Heat to boiling in Dutch oven over high heat. Boil, stirring often until jam is translucent & thick-about 25 minutes. Skim off foam & immediately pour into hot sterilized jars leaving ¼ inch headspace. Wipe rim of jar then put on lids as tightly as possible & it will seal. Makes 5 ½ pt.

    Amish Peach Pineapple Preserves

    6 c fresh peaches, sliced
    2 c crushed pineapple, undrained
    6 c sugar
    6 oz pkg orange jello

    Cook fruit & sugar for 20 minutes over medium heat; stir constantly. Remove from heat & stir in jello; stir until dissolved. Put in hot sterilized jars & seal.

    Amish Pear Butter

    Ripe pears
    For each qt of pears add:
    2 T lemon juice
    ¼ t nutmeg
    1 ½ c sugar
    ½ t cinnamon

    Wash pears; cook until soft & then press through a large sieve such as an applesauce sieve. Place in hot sterilized jars & seal.

    Amish Raspberry Jam

    5 c ground green tomatoes
    4 c sugar
    6 oz raspberry jello

    Place ground tomatoes & sugar in large kettle. Bring to a rolling boil & boil 10 minutes, stir constantly. Turn off heat & add jello. Stir well until dissolved & put into hot sterilized jars & seal. Cold pack 10 minutes.

    Amish Beet Jam
    6 c beet juice
    2 pkg Sure Jell
    6 oz raspberry jello
    1 ½ c lemon juice
    8 c sugar

    Place beet juice, Sure Jell & lemon juice in large kettle & bring to a boil. Add sugar & jello all at 1 time. Boil 10 minutes & pout into hot sterilized jars & seal.

    Amish Corn Cob Jelly
    12 red corn cobs
    Pkg Sure Jell
    3 c sugar
    3 pt water

    Boil cobs in water for 30 minutes. Remove from heat & strain. Add enough water to make 3 c. Add Sure Jell & bring to a boil. Add sugar & boil 2-3 minutes until it reaches jelly stage. Pour into hot sterilized jars & seal.

    Amish Zucchini Jam
    6 c grated zucchini
    2 T lemon juice
    20 ox can crushed pineapple, drained
    6 c sugar
    6 oz apricot jello

    Step I:
    Add 1 cater to zucchini, bring to a boil & cook 6 minutes.
    Step II:
    Add sugar, lemon juice & pineapple & cook 6 more minutes.
    Step III:
    Add jello & cook 6 more minutes and seal in jars.

    Amish Pear Honey

    3 qt ground pears
    3 qt sugar
    2 t vinegar
    1 qt crushed pineapple
    Juice of 1 lemon

    Mix all ingredients well. Cook to desired thickness, stir frequently. Put into hot sterilized jars & seal. Cold pack for 10 minutes.

    Amish Cinnamon Apple Jelly
    1 qt apple juice
    1 box Sure Jell
    4 ½ c sugar
    2 T red hots candy

    Mix together & cook on medium boil for 3 minutes. Place in hot sterile jars & seal.

    Amish Apple Butter
    6 qt applesauce
    3 T vinegar
    2 t cinnamon
    1 t allspice
    ½ t cloves
    7 lb sugar

    Mix all together in a large pan & bake at 350° for 3-4 hours, stir occasionally. Less sugar maybe used if apples are sweet.

    Thanks for these recipes. I think I'll try all of them except for the "corn" one.

    I will process these recipes in a hot water bath to be sure they are sealed and last for the winter. I want to be sure that I have 100% results. (I stopped using wax tops years ago. Even 'sealed' ones have a percentage of 'loss'(ones w/o hot bath).
