    Let's do a virtual recipe swap! Please post 5 of your favourite tried and true recipes

    Lion House Broccoli Cheese Soup

    1 1/2 pounds fresh broccoli or 2 10 oz packages frozen chopped broccoli
    3 Tbs. butter
    1/4 cup chopped onion
    3 Tbs. flour
    2 cups chicken broth
    2 cups light cream
    1 tsp. salt
    1/4 tsp. nutmeg
    1 cup grated cheddar cheese

    Wash and chop broccoli. Cook in a small amount of salted water until tender. Melt margarine in heavy saucepan. Add onion and cook until clear. Stir in flour to make roux; slowly add broth and cream. Stir and cook just until thickened. Add salt, nutmeg, and cooked broccoli. Just before serving, stir in cheesse. Makes 6 servings.

    CHOCOLATE CRINKLES

    1/2 cup oil
    4 squares unsweetened chocolate (4 oz.)
    2 cups sugar
    4 eggs
    2 tsp. vanilla
    2 cups flour
    2 tsp. baking powder
    1/2 tsp. salt

    Powdered sugar

    Melt chocolate; mix with oil and sugar. Blend in one egg at a time until well mixed. Add vanilla. Stir flour, baking powder and salt together and add to chocolate mixture. Chill several hours or overnight.

    Drop teaspoonfuls of dough into powdered sugar. Roll in sugar and shape into ball. Place 2" apart on greased baking sheet. Bake at 350 degrees 12 - 13 minutes til almost no imprint remains when touched lightly in center. Makes 6 - 7 dozen.

    CARAMEL TOFFEE SQUARES

    Bottom Layer:
    1 1/4 cups flour
    1/4 cup sugar
    1/2 cup butter, softened
    2 tsp more butter

    Second Layer:
    1/2 cup butter
    1/2 cup packed brown sugar
    2 tbsp corn syrup
    1/2 cup sweetened condensed milk

    Third Layer:
    2 cups semisweet chocolate chips

    Bottom: Combine the ingredients well, pack into an ungreased 9" x 9" pan. Bake at 350º for 20 minutes.

    Second Layer: Combine in a heavy saucepan.Bring to a boil over medium heat, boil 5 minutes, stirring constantly as it burns easily. Beat with spoon slowly until it shows signs of thickening. Pour over the baked bottom layer.

    Third Layer: Melt chocolate in saucepan over low heat or over hot water. Pour over the second layer. Chill.

    Best Cheese Ball Recipe

    Jean Pare Company's Coming Appetizers

    2 8 oz. blocks of cream cheese, room temperature
    2 cups shredded sharp cheddar cheese
    2 tsp. Worcestershire sauce
    1 tsp. onion flakes
    1 tsp. lemon juice
    1/8 tsp. cayenne pepper
    1/8 tsp. salt.

    Combine all ingredients in a bowl. I make individual balls and roll a third each in: chopped walnuts, paprika and fresh parsley. Looks great at a Christmas party.

    Wild Rice and Broccoli Casserole
    ("The Best of Bridge" page 93
    "The Best of the Best and More" page 176 )
    Don't turn your nose up at the canned soup and rice mix - lots of really elegant ladies prefer this to their caterer's fare!

    1/2 lb. cheddar cheese, grated
    2 heads broccoli (approx. 2 lb.)
    1 pkg. Uncle Ben's Wild Rice Mixture
    2 cans (or less) mushroom soup



    Cook rice mixture as directed. Cook broccoli until crunchy. Mix soup and cheese. Grease casserole dish. Alternate cheese, soup mixture, broccoli and rice in layers. Sprinkle with additional grated cheese. Cook at 350 F. for one hour.

    Okay, here are my five:

    The Best Ever 7up Cake

    Ingredients:

    3 sticks of butter @ room temp.
    3 Cups of sugar
    5 eggs ( I use room temp ones)
    1 Tbs. Pure Lemon Extract
    3 cups cake flour (I use swans down)
    3/4 Cup 7-up, no substitutes

    Preheat oven to 325 degrees. Grease and flour angel food bundt pan (most cakes I make, i use pam, but for this one the grease and flour method is a must. Otherwise you wont get the crunchy "crust" on the cake). Cream butter , sugar and eggs. (Add one egg at a time & beat for 5 minutes Very Important! after each addition) I use speed 2 on my KA mixer. Gradually add cake flour, lemon extract and 7-up alternated this way. Mix for an additional 10 minutes when all added. Bake @ 325 for 1 hour to 1 hour 15 minutes. Use cake tester after 1 hour of baking. I find that 1 hour 10 minutes is perfect. *Invert on plate Immediately after removing from the oven or you will have a mess if you let it cool in the pan. Now some people like this plain, but I do make a "glaze" that I made up to drizzle over this. I just use 1 -1/2 cups of powdered sugar and wisk in the juice of 1 whole lemon until a good consistency. Sorry I dont have a real recipe for the glaze...I just kept making different ones till i found the best one, and this is it. Serve warm or cool and you'll be in heaven, I promise! ENJOY!!!!!!

    Chicken Divan

    4 boneless ckn breasts
    1 can cream of mushroom soup
    3/4 cup milk
    1 box stove top stuffing
    1/2 pound fresh sliced mushrooms
    1 bunch fresh broccoli, steamed and chopped coarse. (I use frozen but WELL drained)
    1 pound fresh grated swiss cheese

    Bake chicken for 30 min @350, let cool and dice. Set aside. Mix soup, and 3/4 cup milk in saucepan and heat until warm, add sliced mushrooms and set aside.
    Prepare stuffing and spread in lightly oiled Casserole Dish. Place broccoli on top, then chicken. Pour soup mixture over ingredients. Sprinkle cheese on top. Cover with foil and bake @ 350 for 45 minutes. This one is my Hubbys absolute favorite!!

    Peaches and Cream Cake

    1 1/2 cups flour
    1 tsp salt
    2 tsp baking powder
    2 eggs
    1 cup milk
    2 small boxes of vanilla pudding, one instant and one cook n serve

    Combine above ingredients and beat 2 minutes at medium speed. Spread into greased (I Use pam) 9x13 pan. Drain 1 large can of peaches (I use O'sage raggedy peaches) saving syrup. Arrange peaches evenly over batter.
    Then:

    1-8 oz cream cheese
    1 cup cugar
    6 Tbl. of the peach syrup

    Beat above together for 2 minutes at medium speed and spread over peaches.
    Then:

    1 tsp. cinnamon
    2 Tbl Sugar
    Mix together and sprinkle on top of whole cake.

    Bake @ 350 for 35-40 minutes.

    YUMMY!!!!

    VANILLA DREAMS

    Our jaws dropped, literally, when we tasted these cookies in the test kitchen. As I said above, many tasters had an immediate flashback to the sugar cookies of their youth. The ultra-tender, light, melt-in-your-mouth texture is unlike anything you can get (well, at least anything we can get) using baking powder or baking soda. That said--I apologize for calling for an ingredient here that many of you may not have, but in this case, it’s essential to the cookie. Baker’s ammonia (ammonium carbonate) is inexpensive; it may be available in your local pharmacy, and is certainly available in our catalogue--click on the link above to reach it on our Web site.

    1 1/4 cups (9 ounces) sugar
    2 sticks (8 ounces) unsalted butter
    1 teaspoon salt
    1 1/2 teaspoons vanilla 2 cups (8 1/2 ounces) King Arthur Unbleached All-Purpose Flour
    1/4 teaspoon baker’s ammonia

    MIXING AND SHAPING: In a medium-sized bowl, beat together the sugar, butter, salt and vanilla. Add the flour and baker’s ammonia, and beat till the dough almost comes together; it’ll seem quite dry at first, but keep beating, eventually it’ll become chunky and cohesive. Squeeze the dough together, gather it into a ball, and break off pieces about the size of a shelled chestnut (about 3/4 ounce, about 21g). Roll the pieces into balls, and roll them in sparkling sugar (or granulated sugar) if desired. Put them on parchment-lined or lightly greased baking sheets, and use the bottom of a glass, dipped in sugar if necessary to prevent sticking, to flatten the balls to about 1/4- to 3/8-inch thick.

    BAKING: Bake the cookies in a preheated 300°F oven for 30 minutes, until they’re a very light golden brown. Remove them from the oven, and cool on a rack. Yield: about 33 2 1/2-inch cookies.

    Cabbage Roll Casserole

    1/2 small head of cabbage
    3/4 pound ground beef
    3/4 pound ground sausage
    1 cup instant rice uncooked
    1 cup water
    1 16 oz can tomato sauce
    1 16 oz can diced tomatoes
    1 16 oz can sauerkraut
    1 onion

    Brown Sausage, gr beef and onion
    I season my meat mixture heavily.
    Shread cabbage and place in baking dish, I use pam in mine. Place meat mixture over cabbage, I season mine again here. Put the one cup of rice over the meat, and put the sauerkraut over the rice. (I ALWAYS use more kraut as we love it) Mix together (makes it more simple) Tomato sauce, diced tomatoes and water, paour over kraut. I season mine again here. Cover and bake for one hour @ 350. I usually bake mine longer to assure the rice is done.

    GREAT IDEA! Here are mine..most are from TOH except the first..

    Amytt's 7 Layer Taco Dip
    1 can refried beans
    1 package taco seasoning mix
    1 container sour cream
    1 avocado
    1 package guacamole seasoning mix
    1 tomato chopped
    1 onion chopped
    1 (small) can (drained)chopped green chilies (I use El Paso brand)
    1 small can black olives chopped
    1 bag Mexican style shredded cheese.
    1 bag tortilla chips

    To Prepare:
    1) In an ungreased 9x13 pan, begin your layers. First mix beans and taco seasoning until blended and layer on bottom of pan. Top w/ 2nd layer, sour cream.

    2) Mix avocado (remove seed) with guacamole seasoning mix until smooth and layer on top of sour cream. (If you prefer, you can buy already prepared guacamole).

    3) Next layer green chilies (liquid drained!). Then layer chopped onions, tomatoes, then black olives.

    4) Top w/ shredded Mexican cheese and refrigerate at least 3-4 hrs before serving (I make this the night before).
    Serve w/ tortilla chips!

    Three-Step Beef Stroganoff
    1 ½ pounds boneless round steak (thin sliced)
    1 tablespoon vegetable oil
    1 can cream of mushroom soup
    ½ cup water
    1 envelope Lipton dry onion soup mix
    ½ cup sour cream
    Hot, cooked noodles

    1) In a large skillet, cook beef in oil until no longer pink. Stir in soup, water, and onion soup mix.
    2) Reduce heat to low, cover and simmer for 20 minutes.
    3) After 20 min, stir in sour cream and heat through. Serve over noodles.

    Classic Cheesecake

    2 pkg cream cheese softened
    ½ cup sugar
    ½ tsp. Vanilla
    2 eggs
    1 ready to use graham crust

    1) Preheat oven 350. Mix cream cheese, sugar, and vanilla w/ electric mixer on medium speed until well blended. Add eggs, mix until blended. Pour into crust. Bake at 350 for 30-40 min. until center is set to touch. Refrigerate 3 hrs or overnight. When cool, top w/ your choice: canned cherries, fresh fruit, etc.

    My last two...

    Deep-Dish Brownies
    ¾ cup melted butter
    ½ cup unsweetened Hershey cocoa powder
    1 ½ cups white sugar
    ½ teaspoon baking powder
    1 ½ teaspoons vanilla extract
    ½ teaspoon salt
    3 eggs
    ¾ cup all-purpose flour

    1) Preheat oven to 350 degrees. Grease 8x8 inch square pan.
    2) In a large bowl or Kitchen aid stand mixer, blend melted butter, sugar, and vanilla. Beat in eggs, one at a time. In another bowl, combine flour, cocoa, baking powder, and salt.
    3) Gradually blend dry mixture into batter. When done, spread batter into prepared pan.
    4) Bake 30 minutes or until brownies pull away from sides of pan. Cool and cut into squares.

    Grape Jelly Meatballs
    2 jars (18 oz ea.) Smuckers grape jelly
    2 bottles Heinz chili sauce
    1 small can of crushed pineapple
    ¾ cup BBQ sauce
    5 lbs of frozen Italian Meatballs (red bag from Sam’s club)

    1) Put first 4 ingredients in crock pot until grape jelly melts, then add meatballs to crock pot. Cook 6 hrs on low.

    Salmon Burgers

    Amount Measure Ingredient -- Preparation Method

    1 can salmon -- drained and flaked
    2 cups Panko -- divided
    1/2 cup mayonnaise
    1 Tablespoon mustard
    1/2 chopped bell pepper
    1/2 chopped red onion
    salt & pepper to taste
    1 teaspoon lemon juice
    1 egg

    Keep out 1 cup of Panko and mix everything else in a mixing bowl.
    Take a handfull and form a patty.
    Dredge in remaining Panko and fry in a little olive oil until browned on both sides. Serve on hamburger bun using tartar sauce instead of mayo. and add lettuce and tomato.

    April, I have only ever made it with minute rice, This is the only thing I use it in. I cannot tell you how it would come out with regular rice, if you precooked it, it may end up over cooked and mushy. And if you used it raw, it may end up underdone and hard. Im not sure what the best thing to tell you here, other than use the minute rice. Im sorry, maybe someone else has a suggestion for you.
