Baked Bananas (serves 12)
12 firm bananas, cut into thirds
3 T fresh lemon juice
1 t grated orange peel
1/2 t cinnamon
1/4 t nutmeg
1/3 cup brown sugar (I use light)
1 stick butter, cut into thin pats
salt to taste
Place banana sections in a 13x9x2 inch baking dish. Sprinkle with juices, peel, spices and brown sugar (I'm sometimes a little more generous with this than the recipe suggests). Dot with butter and salt lightly. Bake at 350 for 45 minutes, basting occasionally. Serve hot. May be prepared and refrigerated several hours before baking, in which case add 5 minutes to cooking time.
If plantains are used, increase the sugar and the cooking time.
Nice for brunch with grillades, for example. Good side for BBQ, especially pork.
