    Christmas Cookies "Cookbook"

    How about everyone posting one favorite cookie recipe that they make for Christmas?

    This recipe came from the Mary Moore Cookbook (1978) She used to write a food column in a newspaper called the Western Producer. My family has made these every year since the cookbook came out. This makes a softer gingerbread and it wouldn't be Christmas without them.

    Ginger Cookies (cutouts)

    1 cup shortening
    1 cup sugar
    2/3 cup molasses
    2/3 cup warm strong coffee
    5 cups cake flour
    1 tsp salt
    1 tsp baking soda
    2 tsp. ginger
    1 tsp. cloves
    1 tsp. cinnamon

    Cream shortening and sugar together in large bowl until light. Add molasses. Measure coffee in molasses cup to rinse it out and mix in. Combine flour, salt, soda and spices into the first mixture and blend thoroughly. Shape into 3 balls and chill for at least 2 hours. Roll dough out 1/8 inch thick and cut out shapes. Bake on a lightly greased cookie sheets at ero for 7 minutes. Be sure not to over bake cookies. Makes 42 gingerbread plus 6 dozen additional 2 inch shapes.

    Got these off a recipe card of my Mom's. Think it was from Betty Crocker.

    CREAM WAFERS

    1 c. soft butter
    1/3 c. whipping cream
    2 c. a.p. flour
    granulated sugar

    Mix thoroughly butter, cream and flour.
    Cover and chill. Heat oven to 375 degrees.
    Roll about 1/3 of dough at a time 1/8 inch
    thick on floured cloth-covered board.
    (Keep remaining dough chilled) Cut into
    1-1/2 inch rounds. Transfer rounds with
    a spatula to piece of waxed paper that is
    heavily covered with sugar; turn each round
    so that both sides are coated with sugar.
    Place on ungreased baking sheet. Prick rounds
    with fork about 4 times. Bake 7 to 9 minutes
    or until just set, but not brown. Cool. Put
    cookies together in pairs with Creamy Filling.

    CREAMY FILLING

    Cream 1/4 c. soft butter, 3/4 c. confectioners sugar
    and 1 t. vanilla until smooth and fluffy. Tint with
    a few drops of food coloring. Add few drops of
    water if necessary for proper consistency.
    Makes about 5 dozen cookies

    PFEFFERNEUSE (HOLIDAY COOKIE)

    SPECIAL NOTES:

    THIS RECIPE HAS TO BE MADE SEVERAL WEEKS BEFORE CHRISTMAS SO THAT THE
    FLAVORS MELD TOGETHER BEST!!!

    ***Pfefferneuse is German for "Peppernut". The "P" is sillent.

    INGREDIENTS:

    1/4 cup butter
    1/2 cup molasses
    1/2 cup light corn syrup
    1/2 cup brown sugar
    1/4 cup shortening
    1/2 tsp anise
    1/4 tsp ground cloves
    1/4 tsp allspice
    1/2 tsp cinnamon
    1/8 tsp pepper
    1 egg well-beaten
    3 1/2 cups flour
    1/2 tsp baking powder
    1/4 tsp baking soda


    INSTRUCTIONS:

    In a large saucepan, heat the first five ingredients. Cool for 45 minutes. Combine the next five
    ingredients. Stir into the cooled mixture. Mix in egg and blend. In separate bowl, combine flour,
    baking powder and baking soda. Add to main mixture in fourths. Mix well after each addition.
    Cover and let stand overnight at room temperature.
    Shape into 1" balls. Place on an ungreased cookie sheet and bake for 12 minutes at 350 degrees.
    Cool slightly and roll in confectioner's sugar. Store in a covered container in a cool dry place for
    several weeks.

    ROSETTES: This is our "family favorite" It wouldn't be Christmas without making a couple of batches. Be sure you have plenty of papertowels and newspapers!!!
    Rosette irons can be purchased at a specialty kitchen shop...I've even seen them in a $ store. The secret to these is to have your grease at the right temperature...I use peanut oil.

    ROSETTES:

    INGREDIENTS:
    2 eggs
    1 tablespoon white sugar
    1 cup sifted all-purpose flour
    1 cup milk
    1 teaspoon vanilla extract
    1/4 teaspoon salt



    DIRECTIONS:
    Combine eggs, sugar and salt; beat well. Add remaining ingredients and beat until smooth.
    Heat a rosette iron in deep, hot oil (375 degrees) for 2 minutes.
    Drain excess oil from iron. Dip in batter to 1/4 inch from the top of the iron, then dip iron immediately into hot oil (375 degrees).
    Fry rosette until golden, about 30 seconds. Lift out; tip upside down to drain. With fork, push rosette off iron onto a rack placed over paper towels. (I put paper towels on newspapers because it gets messy!)
    Reheat iron 1 minute; make next rosette.

    I believe I got this recipe from a Betty Crocker Cookbook many, many years ago. I've made these during Christmas for years. They are a family favorite.

    Orange Crisps

    1/2 cup shortening
    1/2 cup butter or margarine, softened
    2 1/2 cup all-purpose flour
    1/4 tsp baking soda
    1/4 tsp salt
    1 tbls orange juice
    1 egg
    1/2 cup granulated sugar
    1/2 cup brown sugar (packed)
    1-2 tsp grated orange peel

    Preheat oven to 375°F. Cream shortening, butter and sugars. Belend in remaining ingredients. Fill cookie press with 1/4 of dough at a time, form desired shapes on ungreased baking sheet. Bake 10-12 minutes or until lightly brown on edges. Let cool about 3 minutes before removing to rack to cool completely.

    Variation: Lemon Crisps: Substitute 1-2 tsp grated lemon peel and 1 tbls lemon juice for the orange peel and juice.

    Sometimes to make it more festive, I'll put some strawberry jam between two cookies, flat sides together.
