Need Cajun/Creole recipes???

    Need Cajun/Creole recipes???

    Because Christmas is such a busy time for singers, our choir decided last year to skip a Christmas party and have a "Mardi Gras" party in February instead. Everyone brought food with a "Cajun, Creole, or 'French' theme" and it was a huge success, so we are planning to do it again this year. I need a recipe to take to this year's covered dish party. There will be about 30 people in attendance, so it needs to be something that can be doubled (or tripled) and that will transport easily. We hold it in the school cafeteria, so we do have refrigeration to keep things cold and ovens to warm things. Any suggestions would be appreciated! judyfish

    Well gee that leaves us with a few points to ponder. What are you thinking about. Appetizers, main dish, side dish, dessert.

    We can go with pralines or red beans and rice or are you wanting something with seafood in it. The list could go on and on. You could even have a big shrimp or crawfish boil. You tell me and I will either have the recipe or I can direct you to some great sites to help you.

    If you want to do something really special I can give you a place that you can order some of the king cakes they have done in New Orleans for the Mardi Gras.

    We did some research last year and ordered the "boxed" ingredients for a king cake which one of our members (who is a super baker!) made for us all. It was a big hit, and she is planning to make it again this year.

    I should have been more specific and said I was really looking for a main dish, side dish, or salad of some type.

    My mom always has a "Mardi Gras Gumbo"
