    Pan frying a steak???

    A while back I found a way of frying a steak in a cast iron skillet. I can't remember how to do it. Can anyone tell me how to do it.
    Can you believe that I actually smelled this steak frying last night while I was at work. Right in the middle of making garlic toast.
    What a time to smell that.

    PAN SEARED RIB EYE
    Recipe courtesy Alton Brown

    1 boneless rib eye steak, 1 1/2-inch thick
    Canola oil to coat
    Kosher salt and ground black pepper
    Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

    When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

    Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

    Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

    Yield: 1 to 2 servings
    Prep Time: 10 minutes
    Cook Time: 5 minutes
    Difficulty: Easy

    I DO THE SAME THING CITTI DOES EXCEPT I SPRINKLE GARLIC POWDER ON THE STEAK (BOTH SIDES) COURSE I SPRINKLE GARLIC ON EVERYTHING. ENJOY

    Thanks for this recipe. I can't adjust the temp in the oven that well to know when it is 500degrees. The oven needs work. So I was hoping to find the recipe where you heat the pan on top of the stove. I only remember bits and pieces of how to do it.
    Does anyone know how??

    If you can get the book "How To Think Like A Chef" it has instructions for pan frying a steak. I don't have the book handy, but this is what I remember:

    Heat the pan then add a touch of olive oil.
    Cover the steak in kosher salt (not regular salt)
    Cook the steak on each side for 5 to 7 minutes (obviously it depends on thickness and how done you want it).

    Thanks treehuggin..I'm looking for a certain way of doing it in a cast iron skillet. I remember it being quick and easy.
