    Recipe Review-GrannyBarbieJ's Sloppy Pineapple Cake

    Man, oh man, oh man. This cake is melt-in-your-mouth wonderful! I made it this morning. I might get some whipping cream and put a dollop on a piece. I'm going to have to hide this from myself. I give it ***** 5 Stars!

    Sloppy Pineapple Cake

    In Cake Pan:

    2 C Flour (all purpose)
    2 C Sugar
    1 Tsp Baking Soda
    1 can crushed pineappe (15 to 20 oz.)
    2 eggs
    1 dash of salt

    Bake at 350 degrees for 35 to 45 minutes (until top is a golden brown
    and fork comes out clean)

    Ice while hot (pierce cake)

    Icing:

    Boil for 5 minutes ONLY!!!

    1 C Sugar
    3/4 C Evaporated milk
    1 Tsp Vanilla
    1 Stick butter (or 1/2 C soft butter)

    Do you drain all the juice from the pineapple or add it?

    I made your cake this evening and DH ended up eating 2 large pieces before it even cooled.
    It is tasty and very easy to make. I send goodies with DH to where he volunteers and love to do cakes he can take in the pan. So this will fit the bill for that just great.

    yes you can mix the cake up in the pan ... but I dont I use a bowl. The juice from the pineapple is hte liquid used in the batter. You pour in the pineapple juice and all. I use a 9 by 13 pan to bake it in. It is vry declious. sorry i was solate getting on to answer the questions. hugs granny

    I have a recipe very similar to the one you reviewed, but it uses a cream cheese icing!!!! It is so good! And you are not kidding about having to hide the cake from yourself...I can't leave it alone either.
