    Applesauce cake

    I am looking for an applesauce cake that has raisins in it and is made with equal instead of sugar. My mother sent it to me about 10 yrs. ago ,and now I cannot find it! Does anyone have this or one simular to it that they wish to share? It was very moist and had a fabulous flavor to it . Thanks so much, texasbaker

    Comments: this is one of my dad's favorites recipe. I will make this is two small square cake pans. That way he can freeze half of it.

    Ingredients:
    2-1/2 c. flour
    2 c. sugar
    1-1/2 c. applesauce
    1/4 c. shortening
    1 egg
    1 t. ground nutmeg
    1 t/ ground allspice
    1/2 c. raisins
    1/2 c. chopped pecans
    2 /t. baking soda
    1/2 c. boiling water

    Frosting:
    2 t. flour
    1/2 c. packed brown sugar
    1 t. ground cinnamon
    1 t. margarine, melted
    1/2 c. raisins
    1/2 c. chopped pecans

    Instructions:
    Preheat oven to 325
    Grease a 9 x 13" cake pan
    Combine flour, sugar, applesauce, shortening, egg, nutmeg and allspice.
    Mix well
    Stir in raisins & pecans
    Combine soda & water: add to batter. Mix well
    Pour into pan
    Bake 50 - 55 min. or until toothpick inserted into center comes out clean
    Frosting:
    Combine brown sugar, flour & cinnamon. Add margarine. Stir in raisins & pecans. Spread on warm cake.
