    Step-by-Step: Manicotti 1, 2, 3


    1. Soak no-boil lasagna noodles in boiling water for 5 minutes until pliable, using tip of paring knife to separate noodles and prevent sticking.

    2. Using soupspoon, spread about 1/4 cup filling onto three-quarters of each noodle, leaving top quarter of noodle exposed.

    3. Roll each noodle by hand and place in baking dish, seam side down.

    Many recipes replace the traditional pastry bag with a zipper-lock plastic bag. But using a plastic bag to stuff parboiled manicotti shells is a messy, frustrating job that is eliminated by our simple recipe.

    I know this isn't Healthy Choice at all, but am putting here for the bakers in the group.   Sounds good for a gathering or company coming.   It was posted on the Recipe Board by quilter_va.

     

    Multiple-Choice Bar Cookies

                  Found this and thought it sounded interesting. 

     

                Multiple--Choice Bar Cookies              

     

     ½ cup butter           1 can sweetened condensed milk (14 ounces)            

     

    Group A:  1 ½ cups            Graham cracker crumbs           Vanilla wafer crumbs            chocolate wafer crumbs           Animal cracker crumbs           Sugar cookie crumbs             

     

    Group B:  2 cups            Chocolate chips           Butterscotch chips           Peanut butter chips           Raisins (regular or golden)           M & M’s (no nuts)            

     

     Group C:  2 cups            Flaked coconut (5 ounces)           Rice Krispies           Miniature marshmallows (use 2 ½ cups)           Frosted cornflakes, crumbled            

     

     Group D:  1 cup            Chopped walnuts           Chopped pecans          Chopped peanuts           Chopped cashews             

     

    Melt the butter and pour it into a 9 x 13-inch cake pan.  Tip the pan to coat the bottom.   Evenly sprinkle one ingredient from Group A over the melted butter.   Drizzle sweetened condensed milk over the crumbs           

     

     Evenly sprinkle one ingredient from Group B on top.           

     

     Evenly sprinkle one ingredient from Group C on top of that.            

     

      Evenly sprinkle one ingredient from Group D over the very top.           

     

     Press everything down with the palms of your hands.           

     

     Bake at 350 degrees for 30 minutes.            

     

     Cool thoroughly and cut into brownie-size bars.

    Chocolate Chip Cookie Pies

    1 box yellow cake mix (not butter mix)                                                                              1/2 cup oil                                                                                                                          1/2 cup Brown Sugar                                                                                                          1/2 to 1 cup chopped pecans                                                                                          2  Eggs                                                                                                                               6oz. package chocolate chips

    Mix all ingredients by hand except the chocolate chips.  The mixture will be very stiff. Add chocolate chips, work into the batter.  Spray 2 pie tins  (I use the tin foil pie tins) and divide the mixture into 1/2.  Press each half into the pan covering the pan,

    Bake at 350º for 20 - 25 minutes,  no longer.   Pie should be light brown in color.  Cool and cut into pie shape.  Good served warm with vanilla ice cream and chocolate syrup drizzled over the ice cream

    1 box yellow cake mix (do not use the butter cake mix)                                                            1/2 cup Oil                                                                                                                           1/2 cup Brown Sugar                                                                                                             1 cup chopped Pecans                                                                                                         2    Eggs                                                                                                                            6 oz.pkg chocolate chips                                                                                                    

    Mix all ingredients by hand leaving the chocolate chips until last and then add to dough, The mixture will be stiff.   Add chocolate chips and work into dough. Divide the dough into 2 balls, and spray a tin foil pie pan with pam or grease with butter and spread one dough ball into each pie pan.  Bake in 350º for 20-25 minutes.  NO LONGER

    Cool and cute into pie shape and serve

    Good served warm with vanilla ice cream and drizzle chocolate syrup over the ice cream

    Roasted Sesame Green Beans

    1 lb. fresh green beans                                                                                                           1 tablespoons vegetable oil                                                                                                    1 tabkesoiibs sesame seeds                                                                                                 2 teaspoons soy sauce                                                                                                         freshly ground black pepper

    Heat oven to 425º, Trim the beans but leave whole, spread them over a wide shallow baking pan. Drizzle with oil and toss to coat.  Sprinkle with sesame seeds.  Bake 20 minutes, stirring occasionally during the cooking until the beans shrivel, brown in spots and become tender.  Place in a serving dish and season with soy sauce and black pepper.  Serve Hot, warm or at room temperature

    Apple Salad

    1  20oz can crushed pineapple                                                                                               1/3 cup flour                                                                                                                           4 apples, peeled and diced                                                                                                                                     3/4 cup chopped pecans                                                                                                        1/2 cup sugar                                                                                                                         1 stick butter                                                                                                                         8 oz. cool whip, softened

    Cook Pineapple, sugar and flour until thick. Add butter adn let cool, then add apples.  Pour into dish and top with cool whip and and sprinkle with pecans.   Refrigerate until ready to serve

    Cream Cheese Salad Dressing

    1   8 oz package softened cream cheese,  Beat until fluffy                                                        3 teaspoon heavy cream                                                                                                       1 tablespoon salad dressing                                                                                                   2 tablespoon orange juice                                                                                                     1/2 teaspoon orange rind                                                                                                      pinch of salt

    Beat cream cheese, add cream, beat until fluffy, add salad dressing, orange juice, rind and a pinch of salt.   Use on fruit salad

    No Crust Coconut Pie

    4 eggs, well beaten                                                                                                                1 3/4 cup sugar                                                                                                                     2 cups whole milk                                                                                                                 3/4 stick butter, melted                                                                                                        3/4 cup all purpose flour                                                                                                        1 tablespoon vanilla                                                                                                              2 cups coconut

    Combine all ingredients in large mixing bowl and stir well or until blended.  Grease two 9' pie plates.  Divide mixture evenly and bake at 350º for 30-40 minutes or until golden brown.  Yields 2 9 inch pies

    Hello everyone - I'm new here so forgive me if I'm posting this in the wrong place.

    I wanted to say that I recently made Vammie's Chicken and Sausage Gumbo and it was outstanding!  The recipe made enough for an army and it was absolutely delicious - I'll be making it again for sure.    

    (The only things I did differently: I used a 12 oz. pkg. of Aidell's Habanero & Green Chili Smoked Chicken and Turkey Sausage, used an extra celery rib, used 4 chicken breasts instead of 8 and sauteed them in a little oil first, and I used 1 lb. of shrimp instead of 1/2 lb. - it was on sale.)

    So - my thanks to you Vammie for this great recipe! Yes

    Hi SunnyNani. I'm waving at you from northern MN. I'm sure Vammie will not mind where the R&R is posted. You gave her a good one. And from all I've seen here, she certainly deserves it.

    I just found this thread today so have spent most of the day here and enjoyed myself thoroughly.

    I'm looking forward to checking it out - often!
