    Rec & Rev "Stuffed" Pork Chops

    This was from Recipezaar and I will note my changes. The pork chops were nice, very moist surprisingly to me. For breadcrumbs, I had a dried out focaccia loaf from a bakery which was perfect. One reviewer on Zaar suggested sauteeing the celery and onion before adding to the stuffing. That would be good, too, I'm sure, but I did not do that. One thing that was missing was the nice browned look on the chops. The stuffing sits on top of the chops, rather than being in the middle. I did brown them slightly.

    Not Really Stuffed-Stuffed Pork Chops (by Jellyqueen) 2 servings

    2 pork chops
    2 c. breadcrumbs (Jellyqueen used 1 c. cornbread and 1 c. white bread)
    1 T. finely chopped onions
    salt and pepper, to taste
    1 t. parsley flakes
    1 T. finely chopped celery
    (I added d1/4 t. poultry seasoning)
    1/4 c. milk
    1 t. chicken bouillon granules - I used chicken stock that it covered over all in the casserole dish - that's what made it moist
    1 egg, beaten

    Brown chops quickly. Place chops in bottom of casserole dish. Pour water and chicken granules in pan that chops were browned in and stir. Mix remaining ingred. in bowl. Pour water mixture in bowl and mix well. Mound stuffing on top of the chops. Cover and bake at 350 degrees for 45 min.

    One more note - I did not add any water, just used the chicken stock.

    I make my stuffed chops somewhat similar to this, but I put a chop on the top and one on the bottom (thus--stuffed!) I put extra stuffing in, so that each "stuffed pork chop" actually feeds two. I LOVE good center-cut pork chops!
    How's it going, Brenda? We're finally almost settled in the new house in AZ--got the wall/fence/gates finished up today, except for the hole they had to leave to get the pool in!

    Bonnie, I hope you will find good pork chops and other meat soon. Awful tasting meat is disgusting.

    Things are going ok. Believe I left you a message in detail on a thread the other day that I don't want to leave the 'Burgh. Bought the home in GA, but I'm still a city gal. You'd not believe it, but I think GA is much more expensive, and it is in the middle of nowhere, not near Atlanta!
