    KENTUCKY DERBY PIE

    I haven’t made this pie for a long time, but had all the ingredients in the house for this special treat. The pie is in the oven! Although I have had this recipe for years, but don’t know exactly where I picked it up. I saw others had posted recipes similar or just like it.

    1 unbaked 9-inch pie shell
    ½ cup (1 stick) butter (I use Imperial margarine)
    1 cup sugar
    2 eggs
    1 tsp. vanilla
    ½ cup flour
    1 cup semi-sweet chocolate chips
    1 cup pecan halves (I chop or break most in small pieces)

    Preheat oven to 350 degrees.
    Cream butter, sugar, and eggs. Add vanilla. Gradually mix in flour. Stir in chocolate chip and pecans.
    Pour into unbaked pie shell. Place on baking sheet. (I usually put foil around the edge of the crust.)
    Bake for 30-45 minutes, until top is nicely browned. Remove from oven.
    Let set at least 2 hours before serving.

    Crust:
    Pastry for one 9 in" pie

    Filling:
    1 cup light corn syrup
    1/2 cup sugar
    1/4 cup margarine or butter
    1 tsp vanilla
    3 eggs
    1 cup chocolate chips
    1 1/2 cup pecans halves

    Heat oven to 325 F. In large bowl, combine corn syrup, sugar, margarine, vanilla and eggs, beat well.
    Stir in chocolate chips and pecans.
    Bake for 55 to 65 min. or until deep golden brown and filling is set. Cool compleatly and store in refrigerator.

    Thoroughbred Pie

    Crust
    2-1/2 cups flour
    1 tsp. sugar
    1 cup butter, cut up
    1/4 + cup ice water
    Mix all except water in food processor until crumbly. Slowly add ice water until mixture just holds together. Wrap in plastic and chill overnight. Form into pan.

    Filling
    1/2 cup butter,unsalted, melted
    2 eggs
    1 cup sugar
    1/2 cup flour
    1 cup semi-sweet chocolate chips
    1-1/2 cups pecans, chopped
    2 T.B. bourbon

    Beat eggs with cooled butter. Add flour and sugar. Beat until mixed well. Gently fold in pecans, chocolate and bourbon. Pour into pie shell. Bake at 350 degrees for approx. 30 min. Serve with whipped cream.

    Triple Crown Pie by jennct

    4 TBS butter, softened
    3 oz. cream cheese, softened
    1 c. flour
    2 eggs
    1/4 lb. butter, melted
    1/3 c. flour
    1 c. semi-sweet chocolate chips
    1 c. nuts, chopped
    1 c. sugar
    1 TB. bourbon or 1 tsp vanilla
    1/8 tsp. salt

    Cream 4 TBS Butter and cheese. Add 1 cup flour. Roll in wax paper and chill 1 hour. Roll dough out and fit into 9 inch pie pan. Beat eggs until frothy in food processor or blender. Add melted butter and 1/3 cup flour with other ingredients. Process until chocolate is very coarsely chopped. (Do not over-process) Pour into pie shell and bake at 325 degrees for 45-60 minutes, or until the center rises and the pastry is tan. Serve topped with whipped cream.

    Kentucky Derby Pie is really popular in KY, particularly around timing of the Kentucky Derby.

    I actually like this recipe better. It is similar.

    K&W Pecan Pie, aka German Chocolate Pie

    1 cup sugar
    1 tbsp cornstarch
    2 tbsp flour
    2 tbsp cocoa
    1 tsp vanilla
    2 eggs
    3 tbsp melted butter
    2/3 cup milk
    3/4 cup coconut
    1/2 cup chopped pecans.

    Mix all together and pour into an unbaked pie shell. (Recipe doesn't specify size)

    Bake at 400 degrees for 30 minutes.

    This is from the Kentucky Derby Museum Cookbook.
    (It really from "Louavul," the native pronunciation of Louisville)

    1 stick butter
    1 c. sugar
    2 eggs, beaten
    1/2 c. flour
    pinch of salt
    2 T. Kentucky Bourbon (or 1 t. vanilla)
    1 c. chopped pecans
    1 c. chocolate chips
    1 9-inch pie shell, partially baked

    Preheat oven to 350 F. Cream butter and sugar. Add beaten eggs, flour, salt, and Kentucky Bourbon (or vanilla). Add chocolate chips and
    nuts. Stir well. Pour into partially baked pie shell and bake for 30 minutes, or until center is set. Serve with whipped cream or vanilla ice cream.

    Preheat oven to 375°F

    4 Tbs. butter
    1/2 cup dark brown sugar
    1 large egg
    1/2 cup maple syrup
    6 oz. pecans
    6 oz. semi-sweet chocolate
    1 pie crust (unbaked)

    Cream butter and brown sugar. Add egg, mixing well.
    Add maple syrup, and mix until smooth.
    Stir in pecans and chocolate chips. Pour into unbaked pie crust.
    Bake at 375 degrees for about 45 minutes, or until set. A set filling should not move on the outside and jiggle on the inside (like Jell-O).

    TASTE RESULTS:
    The pie is not your traditional pecan pie. This pie is quite chocolatey and less sweet than pecan pies that I've had from bakeries (which I felt was overwhelmingly sweet). I brought the pie into work and it was gone before I knew it with people asking for seconds (but there was none to give out). So, maybe Eric's original recipe of two or three pies would have been better.

    The general concensus was that the pie was very good and a welcome departure from the traditional pecan pie. The chocolate lover's especially liked the chocolate chips and some commented on the excellent flavor that the maple syrup introduced. I recommend trying this recipe!

    40 reduced-fat vanilla wafers
    2 tbsp brown sugar
    1 tbsp butter melted
    1 large egg white, lightly beaten
    Cooking spray

    Filling:
    1/2 cup coarsley chopped pecans, toasted
    1/3 cup semi swet chocolate chips
    2/3 cup dark corn syrup
    1/2 cup packed brown sugar
    3 tbsp bourbon
    1 tsp vanilla extract
    1/4 tsp salt
    3 large eggs lightly beaten.

    Preheat oven to 350°.
    prepare crust, placce cookies in food processor process until finely ground. Add 2 tbsp brown sugar, butter, egg white, pulse 2 to 3 times or just until moistend. Press mixture into a bottom and up sides or a 9-inch pie plate coated with cooking spray. Bake at 350° 5 min. Cool on a wire rack.
    To prepare the filling, sprinkle pecans and chocolate chips into bpttpm of prepared crust. Combine syrup and remaining ingredients, stirring well with a whisk. Pour over pecans and chocolate chips. Bake at 350° for 27 min or until set. cool on a wire rack

    1 (9-inch) unbaked pie shell

    Preheat oven to 350 degrees F.
    Blend all filling ingredients. Pour into unbaked pie shell. Bake for 30 minutes.

    Kentucky Chocolate Pie. This delicious treat is served at Churchill Downs and at Kentucky Derby parties everywhere on Derby Day. The name Derby Pie was trademarked by a Kentucky family, so it can't be called that unless it is made by the Kern's Kitchen where it originated.


    1/4 cup butter
    1 cup sugar
    3 eggs, beaten
    1 1/2 cups chocolate chips
    3/4 cup light corn syrup
    1/4 teaspoon salt
    1 teaspoon vanilla
    1/2 cup chopped pecans
    2 tablespoons bourbon
    1 unbaked 9 inch pie shell

    Cream butter, add sugar gradually while beating. Add beaten eggs, corn syrup, salt and vanilla. Stir in chocolate chips, nutes and bourbon until well mixed. Pour into pie shell. Bake at 375 for 40 to 50 minutes. Be careful not to overbake.

    3 eggs
    1/4 cup white sugar
    1 cup light corn syrup
    1 teaspoon vanilla extract
    1 1/4 cups chopped pecans
    1 cup semi-sweet chocolate chips

    - In a small bowl, blend together cream cheese, 1 egg, 1 teaspoon vanilla, 1/3 cup sugar, and salt. Mix by hand until mostly smooth. Spread mixture into the bottom of the unbaked pie shell.  Sprinkle with chopped pecans.
    - In another bowl, slightly beat 3 eggs. Stir in 1/4 cup sugar, corn syrup, and 1 teaspoon vanilla; blend well. Fold in chocolate chips. Very carefully pour corn syrup mixture over pecans. Cover pie crust edge with a strip of foil to prevent excessive browning.
    - Bake at 375 degrees F (190 degrees C) for 35 to 45 minutes, or until center is set. Cool completely. Store in refrigerator.
