Freeze Rhubarb?

    Freeze Rhubarb?

    A co-worker brought in a plastic grocery bag of rhubarb stalks for me (at my request - the Rhubarb Custard Bars sounded delicious!)

    Anyway - there is way too much for that recipe and I want to save some for later in the year - I know you can freeze it but how?

    Blanch? Freeze when diced??

    Q: How do you freeze rhubarb?

    Fresh rhubarb can be easily frozen to enjoy later on in the year, when rhubarb season is over. To freeze, simply wash and chop rhubarb stalks into recipe size pieces (e.g. 1/2 or 1 inch pieces). Pack rhubarb pieces in freezer bags or containers and place in the freezer. To use, just add the frozen rhubarb to your favorite recipe. You may need to increase the baking time slightly.

    I keep it very simple.

    I wash it in cold water, chop it and lay it on a tea towel (clean!!) on a cookie sheet and pop it into the freezer. When frozen solid, I put it into heavy duty plastic bags and the I have it whenever it's needed.

    I forgot to add that on one of the sites that I went to, they suggested packing it in bags labeled with the number of cups in each bag so that if you know that you're going to want to make a recipe that calls for 4 cups that you can just pull out a bag labeled 4 cups instead of having to thaw out the hole bag. They suggested pulling out the recipes NOW that you would like to use later and measure out the amounts called for into separate bags. I thought that that was a good idea too.
