    Pina Colada Muffins

    Pina Colada Muffins

    1 (2 layer) yellow or butter cake mix
    1 tsp. coconut extract
    1 tsp. rum extract
    1 c. flaked coconut
    1/2 to 1 cup chopped walnuts
    1 (8 oz) can undrained crushed pineapple

    Prepare mix following package directions. Add other ingredients.
    Mix 1 minute - (don't over mix). Grease muffin tins and fill 3/4
    full. Bake at 350 for 15 to 20 minutes.

    I am going to get the stuff and make this for Saturday breakfast.Do you thing I could add something different than the rum extract I really don't care to much for that flavor.Do you thing I could substution Coconut extract for it.Thanks a lot for sharing this recipe.Ccome on people you're letting a good recipe slip away.

    Cubby you can change that I dont think it will make a bit of diference.I was thinkin I might try orange extract Im craving something sweet like crazy.

    OneBusyMama - I have a ? Are these like cupcakes or have more of the consistency of muffins? I thought this would be a great treat for sunday school breakfast. A break from the same ole same ole. (donuts). Thanks for sharing the recipe!

    And Wacky Jack, thank you for bumping it up for us! This board moves so fast that I can't keep up with it. I miss alot of good recipes like that unless someone else bumps em up.

    I have this recipe and haven't made them in a loooong time, but I remember everybody (kids, as well as, adults) loved them, they are very moist!!

    I have a scratch recipe for these and they were out of this world. My husband didn't care for them (poor thing!) so I had to eat them all and since I'm trying to lose weight, I have to stay away from these goodies now but they just melted in your mouth and I wouldn't change any of the flavorings.
