Summertime Freeze
36 gingersnaps, crushed
1 stick margarine, melted
1 tablespoon powdered sugar
Lemon ice cream, softened
Fresh peaches, sliced and sweetened
Mix together the crushed gingersnaps, margarine, and powdered sugar. Press into 9-inch pie pan to make a crust. Bake at 350 for 5 minutes. Cool and fill with softened lemon ice cream. Freeze before serving, and then top with sliced sweetened peaches.
