    Or how about a stuffin' muffin? I like the name.

    Stuffin' Egg Muffin

    Prep Time: 5 min
    Total Time: 30 min
    Makes: 6 servings, 2 muffins each

    1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
    12 eggs
    3 Tbsp. OSCAR MAYER Real Bacon Bits
    1/2 cup KRAFT Shredded Colby & Monterey Jack Cheese

    PREHEAT oven to 400°F. Prepare stuffing mix as directed on package, omitting stand time. Spray muffin cups with cooking spray. Press 1/4 cup stuffing firmly onto bottom and up sides of 12 muffin cups, forming about 1/4-inch rim around top of cup.

    CRACK 1 egg into each stuffing cup. Sprinkle with bacon bits and cheese.

    BAKE 20 min. or until yolks are set. Let stand 5 min. before serving.

    Hamburger Enchilada Casserole
    1 1/2 pounds hamburger
    1 medium onion, diced
    1 can cream of mushroom soup
    1 can cream of chicken soup
    2 cans chopped green chiles
    1/2 cup medioum salsa
    salt & pepper
    2 dashes red pepper
    8 ounces cheddar cheese
    8 flour tortillas, cut in quarters

    1.In dutch oven, brown hamburger with onion. Drain off excess fat. Add soups, salsa & green chiles. Simmer about 10 min.

    2.Layer bottom of 9x13 pan with half tortillas. Pour half of the hamburger mix over tortillas. Repeat. Top second layer with cheddar cheese. Bake at 350* until cheese is melted & all is heated through.

    HOTDISH
    1 pound ground beef
    1 small onion, chopped
    salt and white pepper
    small amount oil for frying
    2 scant cups macaroni
    1 pound can kidney beans
    2 cans tomato sauce
    1 1/4 teaspoons chile powder
    1 teaspoon salt
    1 cup water

    In electric fry pan, brown ground beef with onion, salt and pepper in small amount of oil. Cook macaroni. Add cooked macaroni with rest of ingredients to electric fry pan. Cover and cook on low heat for 20 minutes.

    This was the first thing my son learned to cook:

    Beef Porcupines

    This is super-easy for kids to do.

    1 box Beef Rice-a-Roni
    1 pound ground beef
    1 egg
    2 ½ cups hot water

    Combine beef, rice, not including the seasoning package, and egg. Shape into meatballs and brown in the oven about 10 minutes at 350º. Mix the seasoning package with water, add meatballs, cover and simmer 30 minutes.

    Serve over rice.

    Puffed Omelet, Southwest Style
    Prep: 4 minutes
    Cook: 10 to 12 minutes
    Serves: 3
    This omelet, in whhich egg whites are beaten separately and folded into the yolks, rises to airy heights much like a souffle'.

    6 eggs, separated
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 cup water

    2 tbles. butter
    1 1/2 cups shredded Monterey Jack cheese with Jalapeno peppers
    1 1/4 cups bottled salsa

    Peheat oven to 375 degrees. In a medium bowl, whisk egg yolks with salt, pepper, and 1/4 cup water until well blended. In a large bowl, beat egg whites to soft peaks. Pour yolks over whites and gently fold together with a rubber spatula.
    In a large nonstick skillet with oven-proof handle, heat butter. Pour eggs into skillet and cook over medium-low heat until bottom begins to set,about two minutes. Place skillet in pre-heated oven and cook until omelet is puffed and top begins to color, 8 to 10 minutes.
    Using a heavy potholder, remove skillet from oven. Sprinkle with cheese, make a crease down center with a large spatula and fold in half, pressing firmly for 15 seconds so omelet stays folded. Spoon salsa on top and cut into thirds to serve.
