    (o: Secret Sister Swap #1 Favorite Recipes (Jan. '06-June '06) :o)

    I put together a collection of recipes for my Secret Sister, HH (Pat), in the first Secret Sister Swap. Pat has a particular fondness for the organization/church-type cookbooks and I so badly wanted to find one for her to add to her collection!! I searched and searched but I just could not seem to find one that struck me as 'The One'! :O) I got the idea to put together my own version for her. I put out a request to the SS's for their favorite T&T recipes. Many responded. For those who didn't, I went into the TOH archives to find at least one recipe from each of them. If they posted it, they obviously thought it was a good one to share so it stood to reason it had to be T&T!! I even had several contributors who were not a part of the original Swap, but whom I included as Honorary Secret Sisters!! Well, this thread is the end result of that project! Each of the moderators, HDMac {{Marcia}}, cllw {{Linda}} and SCC {{Susie}} also received one as a Thank You for all their efforts and dedication to that Great Swap. I made a computer file copy of the cookbook available to any who requested a copy over on Hints and Tips and the response was great!! A former co-worker of mine requested a copy of the cookbook and she suggested that I post the file as a Favorites for the board! So, here it is!! It may take me several days to get all of it posted, so please bear with me!!

    I again thank all of the Secret Sisters for their wonderful recipe contributions to this board and to the SS Cookbook!! This thread is dedicated to YOU especially. But also to ALL of the great cooks who frequent and share so much of themselves to this board!! Enjoy!!

    Artichoke Spinach Dip

    Pabby says, "This is a dip that everyone that comes to our house asks for the recipe for. Hope you like it too. It would be a great appetizer for the Super Bowl but we make it alot just to eat. I usually serve it in a small dip warmer that I can plug in. Enjoy!!!"

    Artichoke Spinach Dip

    1-2 pressed garlic gloves
    1 pkg. frozen chopped spinach, thawed and squeeze all the water out
    1 cup mayonnaise (I use Hellman's)
    1 c. artichoke hearts chopped ( I use Heart of Palm's in a can and put it in my small chopper)
    1 cup fresh shredded Parmesan cheese

    Serve with Tostitos Chips.
    Mix together all ingredients and bake at 350 degrees for 15-20 minutes.

    Buffalo Balls

    Confessor (Shannon) says, "Ok, here's my contribution: (sorry about the name) Everyone always raves about these delectable balls! Awesome!!!"

    Buffalo Balls

    boneless chicken breast
    fresh jalapeno peppers (circle sliced-membranes removed)
    thick sliced bacon
    bar-b-cue sauce

    Take boneless chicken breast and cut it into strips.
    Wrap a strip of chicken around a slice of jalapeno pepper (I leave a few seeds in there for the heat).
    Then wrap a piece of the bacon around that to form a ball. Secure with a toothpick.
    Grill the balls over a low heat until done (BE CAREFUL with the bacon grease!)
    When they are done roll them in your favorite BBQ sauce and grill a minute longer.

These are soooo good! I finally made such a pest of myself that she called me with the recipe! - That's it! I think I ate two pounds that night! She said it smells wonderful all day while it's simmering too...."

    BURGUNDY MUSHROOMS

    4 lbs. large mushrooms, cleaned and stems trimmed
    1 1/2 cups butter
    1 quart burgundy wine (any)
    2 TBS. Worcestershire sauce
    1 tsp. dill seed
    1 tsp. pepper
    1 tsp. garlic powder
    2 cups water
    3 beef bouillon cubes
    3 chicken bouillon cubes
    salt

    Bring water and butter to a boil in large pot. Add remaining ingredients and return to boiling. Reduce to simmer. Simmer COVERED 5-6 hours. Remove cover and simmer for an additional 4 hours.

    Cheese Roll

    Cheese Roll

    Roll Velveeta® cheese between wax paper sheets until about 1/4 inch thick. Spread your cream cheese mixture on that leaving one edge 1 inch not covered. Roll up jelly roll style starting with the covered edge across from the one that is bare. Roll it snugly in the wax paper and refrigerate until serving time. Take wax paper off and you can slice it, or leave the roll on a plate. Great with Triscuits® or other crackers. Really neat looking, too. Always a recipe that is asked for!

    I mix my cream cheese with chopped green chiles and chopped olives. A little seasoning, too. Usually garlic and onion powder. Once I put some dry ranch dressing powder in it. Always good no matter what I've put in it! If you have any cream cheese mixture, spread it on a flour tortilla, roll up and slice for pinwheels.

    Corn 'N Ham Fritters

    Corn 'N Ham Fritters

    1 c. Bisquick®
    1/2 tsp. sugar
    1 egg
    1/2 c. milk
    1 c. frozen corn, thawed
    1/2 c. finely diced fully cooked ham
    oil for deep frying
    maple syrup, optional

    In a small bowl, combine the Bisquick® and sugar. In another bowl, whisk the egg and the milk; stir into dry ingredients just until moistened. Fold in corn and ham. In an electric skillet, heat 1½" of oil to 375°. Drop batter by rounded tablespoonfuls, a few at a time, into hot oil. Fry until golden brown, about 1 minute on each side. Drain on paper towels. Serve warm with syrup if desired.

     Yield: 16 fritters.

    Creamy Bacon Bites

    1 (8 oz.) package cream cheese
    4 bacon slices, cooked, drained, and crumbled
    1 (8 oz.) package refrigerated crescent rolls

    Preheat oven to 350. Combine cheese and bacon. Separate crescent roll dough into 2 rectangles, press seams and perforations together with fingers to seal.
    Spread cream cheese mixture onto rectangles, roll up, starting with longest sides.
    Press seams together to seal, cut each roll into 16 slices, place cut side down on grease baking sheet. Bake 12-15 minutes, or until golden brown.

    Crock Pot Cheese Dip

    Fresh Spinach Dip

    2 Cups Sour Cream
    2 Cups Real Mayo
    2 envelopes dry vegetable soup (Lipton, it is the best)
    1 lg. can water chestnuts, chopped fine
    1 bag fresh spinach, washed, patted dry, and torn into small pieces
    1-2 loaves Hawaiian Bread

    Tear out center of bread into finger-sized pieces, leaving bread to be a bowl. Mix remaining ingredients together. Refrigerate. Spoon dip into bread bowl. Arrange on platter. Surround bread bowl with bread pieces.

    spanishteacher says, " This can be easily made in large quantities. ~ When I bring this, I usually pass out the recipe several times. Most of the time, people just stand around the bowl with chips in hand."

    Gazpacho Dip

    2 cans diced tomatoes (NOT drained)
    1 can diced black olives
    1 bunch green olives, chopped (use white and most of green, too)
    3 Tbsp. olive oil*
    3 Tbsp. vinegar**
    salt and pepper to taste.

    Mix all ingredients in large bowl and refrigerate, stirring occasionally. Serve with tortilla chips.

    *You can add more or less oil and vinegar to taste. I don't usually measure this part, but that gives you a starting point.
    **I use apple vinegar lately and I like the taste.
