    Gourmet Brownies - Dipped Brownies

    I was wondering if anyone has ever tried to make Gourmet Brownies, you know the kind with candies, cookies and decorations. If you have tried these and can offer topping or brownie suggestions that would be great.

    Also chocolate dipped brownies sound tasty too. Should they be frozen or just cold when you dip or dredge them?

    I want to make a gift basket for my favorite aunt and she loves chocolate.

    Cookie Dough Brownies (from Choc.Lovers Cookbook)

    BROWNIE BATTER:
    (Box mix can be substituted for batter)
    2 cups sugar
    1-1/2 cups all-purpose flour
    1/2 cup baking cocoa
    1/2 tsp. salt
    1 cup vegetable oil
    4 eggs
    2 tsp. vanilla extract
    1/2 cup chopped walnuts, optional

    FILLING:
    1/2 cup butter or margarine, softened
    1/2 cup packed brown sugar
    1/4 cup sugar
    2 Tbsp. milk
    1 tsp. vanilla extract
    1 cup all-purpose flour

    GLAZE:
    1 cup (6 oz.) semisweet chocolate chips
    1 Tbsp. shortening
    3/4 cup chopped walnuts

    Batter
    In a mixing bowl, combine sugar, flour, cocoa
    and salt. Add oil, eggs and vanilla; beat at
    medium speed for 3 minutes. Stir in walnuts,
    if desired. Pour into a greased 13 X 9 X 2-inch
    baking pan. Bake at 350º for 30 minutes or
    until brownies test done. Cool completely.
    Filling: cream butter and sugars in mixing
    bowl. Add milk and vanilla; mix well. Beat in
    flour. Spread over brownies; chill until firm.
    Glaze: melt chocolate chips and
    shortening in a saucepan, stirring until smooth.
    Spread over filling. Immediately sprinkle with
    nuts, pressing down slightly. Yield: 3 doz

    I have dippe brownies a couple of different ways. I've cut fudgie brownies into one inch squares and froze them and then dipped them in white chocolate or brown chocolate. I've then sprinkled on holiday sprinkles or chopped nuts or drizzled the contrasting chocolate on top. I put them on a rack to drip. These are very delightful and a pretty addition to my holiday trays. I've also just dipped the bottoms.

    For brownies, too, I've cut them out with star cookie cutters and piped white icing around the top edge and dipped the still wet icing in little candy decoration multi-colored balls.

    Have fun, I just love to make Christmas cookies!
