    My mother went to school with the Streit daughters. But I think I like Manischewitz better. But I've used both and actually, I think I have Streit's in my pantry... back in TX, of course. Everything is still back there!

    Did your mom go to school in NYC? My mom went to school with the guy who owns Economy Candy on the LES. Its funny to see places I grew up in on TV. To me its just that candy store...

    All your potato pancake talk is making me hungry. And Sharon, yes for sure on adding the finely chopped onion. Makes all the difference in the world in flavor.

    I agree with laura...I am now in the mood for potatoe pancakes! Maybe I will make some with our chicken wings....
    Does anyone have an EASY recipe???
    Oh yea, I have apple sauce and sour cream...and potatoes!!!

    LOL at the potato cakes...we are not jewish but my Father had lots of jewish friends.and we would have the potato cakes, as a main meal..they were delicious..this is how we made them, grate the potatoes, drain the juice (why does it always go so watery and brown??)add 1 beaten egg,s&p...and then fry in very hot oil...we used to make 2 to a pan, and crispy..and then put on plate, and have a dollop of cold apple sauce on the suide if the plate..delicious...

    actually, I have not thought of that for ages...did make it for Jeff every now and then a a dessert and he loves it too.....could eat that now...yummm


    plus some of that beef and a big gherkin..yummm

    Ok here's a stupid quetion.....how many potatoes do I use? It is just for me and hubby!

    Pat, here's the recipe that I use:

    Potato Pancakes

    INGREDIENTS:
    5 potatoes, peeled and shredded
    2 eggs, beaten
    1 onion, finely chopped 3 tablespoons all-purpose flour
    salt and pepper to taste
    3 tablespoons vegetable oil

    DIRECTIONS:
    1. In a large bowl, stir together potatoes, eggs, onion, flour, salt and pepper.
    2. In a large skillet, heat oil over medium high heat. Drop large spoonfuls of the potato batter into the skillet and flatten cakes slightly with a spatula. Cook for about 4 minutes on each side, until golden brown. Serve immediately.

    Oh yeah, I usually fry them in a cast iron skillet using about 1 tablespoon of oil for each batch fried up. And I cook them over MEDIUM heat.

    My latke technique is similar to the recipe above, except that I don't peel the potatoes, and after grating them, and squeeze them firmly, one handful at a time, over a bowl. Once the pinkish brown liquid settles, I pour it off, leaving a pile of potato starch at the bottom, which I add back to the batter. This reduced the amount of flour needed, and keeps the latkes from getting mushy or from turning greenish when cooked.

    If I'm making latkes for a lot of people, I'll turn the oven on at about 250, and set a wire rack on a cookie sheet in it, to keep finished latkes hot while frying the rest.

    At my house, I figure on 3 potatoes for 2 people if we're also having meat, 5 potatoes if we're just pigging out on latkes.

    Tonight I'm planning one 3 potatoes, and a separate, smaller batch made with sweet potato.

    Since it's only for me, maybe I should just buy some potatoes and a grater! I could probably do it, if it's only grating a couple of potatoes!
