    Trying to learn to use my crock pots

    I have one 4/5 quart crock pot and 2 little 1.5 quart ones.

    I'm trying to find recipes I can cook in them that aren't just soups and casseroles.

    Today I have the two little pots going. One has precooked ham with brown sugar, mustard and coca cola.
    The other has mac & cheese. I made this mac & cheese about a week ago and it was not enough cheese so I added more velveeta, then that made it just too much velveeta taste. So today I added a little cheddar.


    CROCKETTE MACARONI & CHEESE

    2 cups cooked macaroni (1 cup uncooked = 2 cups cooked)
    1 tablespoon butter or margarine, melted
    1 cup evaporated milk (I used 2 5-ounce cans
    1 cup chopped sharp process cheese (velveeta)
    1/4 cup shredded cheddar cheese

    Toss macaroni with butter or margarine.
    Add remaining ingredients.
    Pour into lightly greased crock-ette.
    Cover and cook 2 1/2 hours, stirring once or twice.

    Chicken! Season a whole chicken, put it in breast side down and let it cook. Delicious! Taste just like roasted or rotisseried to me.

    Roast beef - put it in the crock pot and add 1 can ::gasp:: cream of celery soup, 1 package of Lipton onion soup mix, salt and pepper. Also throw some onions and potatoes and carrots in. Yum! Makes its own gravy too. Might have to add some beef broth or a little water if your pot runs hot, to keep it from drying and sucking up all your gravy.

    Ribs! I make a sugar free sauce of ketchup, minced garlic, a little prepared mustard and sugar free jam - whatever flavor I have on hand. Put a good bit on top of the ribs, add a tiny bit of water and let it cook.

    BFC, I love chicken done that way in the crockpot, good for chicken sandwiches the next day also... if there is any left!

    I tried ribs - twice -- they were dry and tough.

    I have decided I really don't like roast. Maybe I ate too many of them when I was a teen, seemed like we had roast every week. And cream of celery soup is worse than cream mushroom! YUCK
    lol


    Will the chicken work if I can't put it breast side down? Even the "big" crockpot is narrow and a bird will not sit on it's breast.

    You are so difficult! lol

    Just how small are these crockpots that a chicken won't go in them? I guess it would be ok if you put it in on its side, but only half the breast would benefit from the extra juices.

    For the record, you can't tell there is cream of celery soup in that roast recipe. It just makes the gravy richer and thicker. You really should try a roast like this; it's not your mother's roast beef!

    cream of celery contains celery -- yuck.

    It's just a standard old crockpot. Not that big oval shaped thing.

    The mac & cheese turned out good -- very cheesey without being stringy or "Too" velveeta.

    The ham - so so..not that great, probably because it was a small ham that had already been sliced.

    This is what I made for dinner using my crockpot.

    Lime Chicken Tacos
    Simple and Delicious Nov/Dec 2006

    1 1/2 lb boneless skinless cihcken breasts (I used 5 frozen chicken tenders and it made plenty!!)
    3 tbl lime juice (I used 1/3 cup)
    1 tbl chili powder
    1 cup frozen corn
    1 cup chunky salsa

    Place the chicken in a slow cooker. Combine lime juice and chili powder. Pour over chicken. Cook for 5-6 hours or until chicken is tender.
    Remove chicken. Shred and return to the slow cooker. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in tortillas with sour cream, cheese and lettuce if desired.

    I don't care for the presliced ham either. They don't do as well, even in the oven'

    I have the Fix=it and Forget it Slow Cooking book. I haven't done a lot , but, like you, am trying to do more.

    I am thinking about getting one of those bigger crocks. The 5 quart. I don't think mine is that big, but , can't find it on the pot just how big it is. A chicken fits in it pretty good, but, I don't think that turkey breast would have fit. I want one for that. Storage is the main problem, though

    I couldn't live without my crock pots.

    There's many cookbooks out there devoted entirely to crock pot recipes.
    There's nothing better than coming in and having dinner ready and the house smelling heavenly. It almost seems like someone else made dinner!

    Tree, I have 3 crockpots and I have about decided you can make anything in them. I search around online and I have found breakfast recipes, dessert recipes for the crockpot. I have my own recipe box at allrecipes, Kraft, Pillsbury and LandoLakes. When I find a recipe I like I store it. At allrecipes.com you can store private recipes from anywhere.

    My problem is trying to find something that I will eat and picky DS will eat LOL

    We don't eat many casserole type dishes. He doesn't like meat in creamy sauces.

    I just found some recipes for chicken that doesn't require creamy soup, so I will try one of those this week.

    Tree, have you ever tried the "Rotisserie Chicken" that was so famous here a few years ago? You just make balls of foil and put them in the bottom of the crockpot, then season the chicken any way you want (salt, pepper, lemon pepper, garlic salt, cajun spices, whatever) then just sit it on the foil and it tastes just like store-bought rotissere chicken. My son makes this with chicken breasts and with leg quarters because a whole chicken would not fit in his crockpot.
