3. Apple Bars with Oatmeal Crumb Topping (M.B.)
Crust:
1 c. unsalted butter, softened, cut in small pieces
2 c. flour
Topping:
1-1/2 c. flour
1 c. light brown sugar
2/3 c. reg. oats + 3 T. for sprinkling
1/2 tsp. cinnamon
2/3 c. unsalted butter, softened, cut in small pieces
Filling:
21-ounce can apple pie filling
Glaze:
1 c. confectioners' sugar
1 T.+ 1 tsp. water
Crust: using med. speed, beat butter, flour, until crumbly and well mixed. Transfer to ung. 13x9" baking pan, using hands, pat crust firmly and evenly in pan.Bake 20 min. @350º.Remove from oven; cool completely, 45 min.
Topping: mix flour, sugar, oats, cinnamon.Using pastry blender, cut in butter until mix. resembles coarse crumbs.Using hands, toss to mix, set aside.When crust is cool, gently and evenly spread apple filling, leaving 1/4" edge.
Sprinkle topping over filling, sprinkle add. 3 T. oats over crumb topping.Bake 45 min.Cool to room temp.
Glaze: combine sugar, water, cover.When bars are completely cool, drizzle glaze over top.Let glaze dry 15-20 min. before cutting.Makes 24 - 2" bars.
