    (o: Secret Sister Swap #2 Popcorn Recipes!! (July '06 - Dec. '06) :o)

     Here we go again! As I did for the very first Secret Sister Swap, I collected recipes from the participants of the second Secret Sister Swap to compile into yet another cookbook of treasured T & T Faves!!!! I begged! I nagged! I begged and nagged some more, and a majority of those wonderful Sisters came through for me yet again with a veritable plethora of awesome recipes! This second cookbook actually has 6 separate sections with well over 500 recipes collected! My initial foray into the archives to collect hidden treasures like I did for the first SS cookbook proved to be far too difficult a task, as we all know how well the infamous 'search feature' has been working these past months!! ! :o) NOT!! Anyway...... here again, is the end result of all my persistent nagging! Were it not for the generosity of all those awesome ladies, this cookbook would never have come to be! If you saw the first one I did, either by requesting a copy of it or on the 'Favorite' thread I posted here on Recipes, you'll find this second one to be quite different! AND, dare I hope, just a bit more FUN because of all the extras I included!!

    Again, special thanks to ALL the SS's who contributed recipes!! As in the first, there were several ladies I dubbed as 'Honorary Vistas' because they were not actually a part of the swap, but DID share a few of their Faves!!

    Extra special Thanks to two fantastic moderators HDMac (Marcia) and cllw (Linda), who did a really bang up job with this second group!! As great a job as you did on the first swap, you did an even more awesome job on the second one!! You know, you two could make this your full time jobs!! Oh!! Sorry!! You already HAVE!! :O) Seriously, you two are the bestest!!!

    This is dedicated to ALL of you Awesome Sisters and Fantabulous Cooks!!

    This cookbook project definitely will take a few days to complete. Because there are well over 500 recipes total, I think I'll post each section separately to make it easier to find specific recipes!! Each thread will start out the same as this one to tie them all together! Each thread will be categorized and the recipes and their contributors listed alphabetically at the beginning of each thread. At the very end, I will, as is becoming my habit with these rather lengthy threads, make a page by page index of all the recipes in THAT particular thread. Perhaps you may want to print a copy of it to make it easier to find a particular recipe or two!! Just a thought! :O)

    Dear SS---MUNCH, MUNCH, MUNCH, MUNCH!!!! (now for a translation).....YOU ARE SIMPLY THE GREATEST!!!! What a wonderful surprise!

    DH and I had just come back from meeting my mom for lunch when I heard a big truck come down the road and turn around. Very unusual because we are almost at the end of a dead end road and very few big trucks come this way. I realized it stopped outside. It was Fed Ex with a box for me! So I was very excited and opened it. IT WAS A VERY SPECIAL FLAVOR POPCORN, MADE ESPECIALLY FOR ME!!!! It was called Micki Secret Sister Crunch. It is caramel macadamia nut butter crunch-flavored and IT IS SIMPLY WONDERFUL!!!! That is just the coolest surprise ever. I don't know whether to take it to school with me on Monday to snack on or to leave it here at home. Of course, there may not be anything left by Monday. LOL.

    Oh the gift message said that she hoped it brought back memories of Hawaii! It sure does! We toured the Macadamia Nut farm on our honeymoon. Perfect memories!

    So, munch, munch, munch, wonderful SS, munch, munch, munch......:-)

    I looked out the window, and what did I see?
    Popcorn popping on my palm tree!

    My SS has sent me such a nice surprise,
    Kernels popping right before my eyes.

    I could take an armful and make a treat,
    A Kahlua popcorn ball that would taste so neat!

    It wasn't really so, but it seemed to be,
    Popcorn popping on my palm tree.

This is done so all sugar and salt crystals are dissolved and none get back in the mixture. Turn heat down and let boil gently with out a lid for 5 minutes stirring constantly.
     When 5 minutes are up remove from heat and stir in baking soda. Syrup will foam but this is normal. Stir until baking soda is completely dissolved. Add butter flavoring and stir. Pour over popcorn slowly stirring popcorn constantly, coating all the popcorn gently. When popcorn is coated, pour almonds in and stir well. Place in a preheated oven at 225 degrees for 1 hour. Popcorn needs to be stirred and mixed through every 15 minutes. When popcorn is finished baking pour onto a non-stick service and let cool.

    4 quarts popped popcorn
    1/3 cup butter, melted
    1/2 teaspoon seasoned salt
    1/2 teaspoon hickory-smoked salt
    1/2 cup American cheese, grated
    1/3 cup bacon bits

     Pour freshly popped corn into large bowl. Combine butter with hickory-smoked salt. Pour over popcorn; toss well to coat. Sprinkle with cheese and bacon bits. Toss again and serve while warm.

    Butter Pecan Popcorn

     8 cups popped popcorn (about 1/3 to 1/2 cup un-popped)
    Nonstick cooking spray
    1/2 cup broken pecans
    2 tablespoons butter or margarine
    1/3 cup light corn syrup
    1/4 cup instant butterscotch or butter pecan pudding mix
    3/4 teaspoon vanilla

    Directions
    1. Discard un-popped popcorn kernels. Spray a 17x12x2-inch roasting pan with nonstick cooking spray. Place the popped corn and pecans in the pan. Keep popcorn warm in a 300 degree F oven while making coating.
    2. In a small saucepan melt the margarine or butter. Remove saucepan from heat. Stir in the corn syrup, pudding mix, and vanilla. Pour syrup mixture over popcorn. With a large spoon, gently toss the popcorn with the syrup mixture to coat.
    3. Bake popcorn, uncovered, in a 300 degree F oven for 16 minutes, stirring halfway through baking. Remove the pan from the oven. Turn mixture onto a large piece of foil. Cool popcorn completely. When cool, break into large pieces. Store leftover popcorn, tightly covered, in a cool, dry place for up to 1 week.

    Makes about 9 (1-cup) servings.

    1 (12 oz.) pkg. butterscotch morsels
    1 c. corn syrup
    1/4 c. butter
    12 c. popped popcorn
    1 (12 oz.) can salted peanuts

     Preheat oven to 300. In saucepan, combine butterscotch morsels, corn syrup & butter. Cook over med-heat, stirring occasionally until mixture boils. Place popcorn & nuts in greased roasting pan. Pour mixture over popcorn; toss to coat well. Bake at 300 for 45 min, stirring frequently. Remove from oven, stir every 10 min. until slightly cool. Cool completely.

    Serves: 1

    Makes: 10 servings

    2-1/2 quarts popped popcorn
    1 cup pecans
    1/2 cup butter
    1/2 teaspoon baking soda
    1 cup brown sugar
    1/4 cup light corn syrup
    1/2 teaspoon salt

     Spread popped popcorn and nuts in a large shallow pan and place in a preheated 250-degree Fahrenheit oven. Combine butter, brown sugar, syrup and salt in a saucepan. Cook over medium heat, stirring until sugar dissolves. Wash sugar from sides of pan with a wet brush. Boil until mixture reaches 248 degrees (firm ball stage on candy thermometer), about 5 minutes.
     Remove from heat and stir in soda. Pour mixture over corn and nuts, stirring gently to coat. Return glazed popcorn and nut mixture to oven and bake 45 minutes, stirring every 15 minutes. When cooled, pack in airtight tins.

    Yield: slightly more that 2-1/2 quarts.

    1/4 tsp. vanilla

    Put popcorn into baking pan. Remove any unpopped kernels.
     In 1-1/2 qt saucepan, put brown sugar, butter, corn syrup, and salt. Cook and stir on med heat until butter melts and everything is mixed. Continue cooking till mixture starts to boil. When mixture boils, stop stirring. Cook for 5 min. Take off heat. Stir in baking soda and vanilla . Pour mixture over popcorn and mix until popcorn is coated.

    Put pan into oven set at 300 degrees. Bake 15. Stir and bake 5 more min. Take a pancake turner to remove carmel corn from pan to large bowl: cool.

    Makes about 8 c.

    *My tweaks- I used a Dutch oven, so I could mix the popcorn and carmel in it instead of the the 1-1/2 qt pan. I used my silpat liners on the cookie sheet. Easy clean up. Or you could use cooking spray. The 2nd batch I made I added 1 c. peanuts.

    2-1/2 quarter air-popped popcorn
    Butter flavored spray (like PAM)
    1 package cherry flavored gelatin

     Put popcorn into a very large bowl and spray lightly with butter flavored oil. Sprinkle with gelatin. Put in 350 degree oven for five minutes. Gelatin will dissolve slightly and stick to the popcorn.
