    (o: Secret Sister Swap #2 Fall Favorites (July '06 - Dec. '06) :o)

    Here we go again! As I did for the very first Secret Sister Swap, I collected recipes from the participants of the second Secret Sister Swap to compile into yet another cookbook of treasured T & T Faves!!!! I begged! I nagged! I begged and nagged some more, and a majority of those wonderful Sisters came through for me yet again with a veritable plethora of awesome recipes! This second cookbook actually has 6 separate sections with well over 500 recipes collected! My initial foray into the archives to collect hidden treasures like I did for the first SS cookbook proved to be far too difficult a task, as we all know how well the infamous 'search feature' has been working these past months!! ! :o) NOT!! Anyway...... here again, is the end result of all my persistent nagging! Were it not for the generosity of all those awesome ladies, this cookbook would never have come to be! If you saw the first one I did, either by requesting a copy of it or on the 'Favorite' thread I posted here on Recipes, you'll find this second one to be quite different! AND, dare I hope, just a bit more FUN because of all the extras I included!!

    Again, special thanks to ALL the SS's who contributed recipes!! As in the first, there were several ladies I dubbed as 'Honorary Sisters' because they were not actually a part of the swap, but DID share a few of their Faves!!

    Extra special Thanks to two fantastic moderators HDMac (Marcia) and cllw (Linda), who did a really bang up job with this second group!! As great a job as you did on the first swap, you did an even more awesome job on the second one!! You know, you two could make this your full time jobs!! Oh!! Sorry!! You already HAVE!! :O) Seriously, you two are the bestest!!!

    This cookbook project definitely will take a few days to complete. Because there are well over 500 recipes total, I think I'll post each section separately to make it easier to find specific recipes!! Each thread will start out the same as this one to tie them all together! Each thread will be categorized and the recipes and their contributors listed alphabetically at the beginning of each thread. At the very end, I will, as is becoming my habit with these rather lengthy threads, make a page by page index of all the recipes in THAT particular thread. Perhaps you may want to print a copy of it to make it easier to find a particular recipe or two!! Just a thought! :O)

    Fall is by far my most favorite season! The smells, the colors, the sound of leaves crunching underfoot. And what about those football games, hay rides and bonfires!! Yup!! The best season of all has got to be Fall!!!

    'Tis the season of pumpkins, apples and squash!!

    'Tis the season of warm, comforting soups, chilies and hot dishes/casseroles!!!

    'Tis the season you actually feel like doing some serious baking again with the cooler days!!! How 'bout some fresh bread or a batch of cookies!!! Or maybe some decadent dessert that just leaves you wanting more!! LOL That being said, I'll start the recipe sharing with that wonderful new recipe I tried out today. It's called: Brown Butter Apple Tarte Tatin (tart tah-TAN) Cake from Cuisine At Home magazine!! OMGOSHHHHHHHHHH!!! Can you say YUM? :O)......................."

    Black Walnut/Ice Box Cookies
     (recipe from Grand B.)

    1 c. shortening
    2 c. brown sugar

    3 c. flour
    vanilla (about 1 tsp.)
    plenty of chopped black walnuts

     Mix all together. Roll into logs. Wrap in wax paper and refrigerate overnight! Bake in 350º oven about 10 minutes. (Slice thin for crisp, yummy cookies!) Store in airtight container.

    Holiday Sugar Cookies

    Holiday Sugar Cookies

    2 cups soft butter (No substitutes)
    2 cups sugar
    3 eggs
    1 Tb. lemon peel
    2 tsp vanilla extract
    6 cups all purpose flour
    1 tsp baking soda

    Frosting:
    3 cups confectioners sugar
    3 Tb. butter melted
    1/4 cup milk

     In a large mixing bowl cream butter and sugar. Add eggs one at a time, beating well after each. Beat in lemon peel and vanilla. Add flour and baking soda to cream mixture.
     Shape into three 10 inch rolls, wrap each in plastic wrap. Refrigerate for 4 hours or until firm. Unwrap and cut into 1/4 slices. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 10-15 minutes or until edges are slightly browned. Remove to wire racks.
     In a bowl combine the confectioners sugar, butter, milk, and food coloring. Frost cookies and use items to decorate cookies.

    2 cups flour
    1 Tb. baking powder
    1 Tb. baking soda
    1 Tb. cinnamon
    1 tsp salt
    3 sticks butter at room temp
    1-1/2 white sugar
    1-1/2 packed lt. brown sugar
    3 eggs
    1 Tb. vanilla
    3 cups semisweet chocolate chips
    3 cups old fashioned rolled oats
    2 cups sweetened flake cocoanut
    2 cups pecan

     Preheat oven to 350 degrees Mix flour, baking powder, baking soda, cinnamon, and salt in bowl.
     In 8 quart bowl, beat butter on medium speed till smooth and creamy, about 1 minute. Gradually beat in sugars and continue beating to combine, about 2 minutes. Add eggs, 1 at a time, beating after each.
     Beat in vanilla, stir in flour mixture until just combined. Add chocolate chips, oats, coconut, and pecans. For each cookie drop 1/4 cup of dough onto ungreased cookie sheet, spacing 3 inches apart. Bake 17-20 minutes until edges are lightly browned. Place on rack to cool.

    1-Minute Apple Tortilla & 3-Minute Apple Cobbler

    1-Minute Apple Tortilla

     Fill 1 whole wheat 6-inch tortilla with 1 kraft singles slice and 4 apple slices. Microwave on high 30 sec.

    3-Minute Apple Cobbler

     Top 6 Nilla Wafers with 1/4 cup applesauce. Microwave on high 15 sec. Top with 1 Tb. thawed Cool Whip Sprinkle with cinnamon if desired.

    Apple Cake

    Apple Cake

    3 cups all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    4 eggs, lightly beaten
    2 cups sugar
    1 cup vegetable oil
    1/2 cup orange juice
    2-1/2 teaspoons vanilla
    3 large apples, peeled, cored, and sliced thin
    2 teaspoons ground cinnamon
    5 tablespoons sugar

     Preheat the oven to 350°. Grease and flour a 10-inch tube pan. Combine the ground cinnamon and 5 tablespoons of the sugar together and set aside. In a large mixing bowl, combine the flour, baking powder, salt, and 2 cups of sugar. Stir in the vegetable oil, beaten eggs, orange juice, and vanilla. Mix well. Pour half of the batter into the prepared pan. Top with half of the sliced apples and sprinkle with half of the cinnamon sugar mixture. Pour the remaining batter over the top and layer the remaining sliced apples, then the remaining cinnamon sugar. Bake for 60 minutes or until done. Cool in pan 10 minutes. Invert cake onto a cooling rack.

    Yield: 10 - 12 servings.

    Apple Cake

    3 eggs
    1-1/2 cups sugar
    1/2 cup oil
    1 tsp vanilla
    2 cups flour
    1 tsp cinnamon
    1 tsp baking soda
    1 tsp baking powder
    4-6 apples pared and diced - I usually use a mix of green and red baking apples
    1 cup walnuts, chopped

     Blend together the eggs, sugar & oil. Add vanilla. Combine the flour, cinnamon, baking soda then add to wet mixture. Mix in the apples and walnuts. Put mixture into an 8" square baking pan. Bake at 350ºF for 1 hour.

    ~The original recipe called for 1-3/4 cup sugar and 1 cup oil - I like a less sweet cake and I thought it was tooooooo greasy so... It also called for a greased pan but I don't do that~

    pastry for a 9 inch two crust pie
    3/4 cup brown sugar
    1/4 cup sugar
    1/3 cup all purpose flour
    1 teaspoon cinnamon
    4 cups pared, sliced, tart apples
    2 cups fresh or frozen cranberries (whole or chopped) (I use chopped)
    2 tablespoons butter

     Preheat oven to 425. In large bowl, combine sugars, flour and cinnamon. Add fruit. Mix well. Turn into pastry-lined pan. Dot with butter. Cover and cut slits in top crust.
    Seal edges. Bake 40 minutes or until golden brown.

    Approximately 6 servings

    *I've never been able to find this size pan, so I use a 9 X 13 X 2" pan and one-and-a-half the recipe!
