    Cookies from Cake mix

    Is there a rule of thumb for doing this? Or is each cake mix different?

    heere is a recipe you might like to use. HOMEMADE OREO COOKIES

    1 box devil's food cake mix
    3/4 c. shorthing
    2 eggs
    Mix together all ingredients. Mixture will be thick. Rool into quarter size balls. place on ungreased cookie sheet. bake at 350 for 7 to 8 minutes.
    Filling:
    1 lb. powdered sugar 1 stick butter 8 oz.pkg.cream cheese 1 tsp.vanilla
    Beat together until smooth. Spread filling on half of the cookies and top with ither half. very good cooies

    I use one box of cake mix, a stick of butter, melted, 1/2 c oatmeal and 2 eggs. I have used all kinds of cake mix brands from the store brand to Duncan Hines...all with good results.

    I like to add in nuts, choc chips or other chips and/or chopped dried fruits...like raisins, dried apricots (esp good with lemon cake), craisins etc....just add about 1/2 c of whatever...as long as there is enough batter to hold it together.

    This is the recipe I make using the Duncan Hines cake mixes. Instead of using lemon cake mix, we also enjoy using strawberry and orange. (Have especially wanted to make raspberry cookies but DH no longer makes the raspberry cake mix.)

    3-2-1 Lemon Cookies

    3 eggs
    2 18 1/4-oz. packages, lemon cake mix
    8-oz. container frozen whipped topping, thawed
    1 cup powdered confectioner’s sugar

    In a large mixing bowl, combine eggs, cake mixes and whipped topping; mix well. Chill dough for at least 3 hours. Drop by tablespoonfuls into powdered sugar; coat thoroughly and roll into balls. Place balls on a greased baking sheet. Bake at 375 degrees for 10 to 11 minutes. Makes 8 dozen.

    This is the one I use:

    Cake Mix Cookies

    Ingredients:
    1 box cake mix (see variations below)
    1/2 C. vegetable oil
    2 eggs

    Instructions:
    Preheat oven to 350º. Lightly grease cookie sheets or line with parchment paper. Mix together cake mix, oil and eggs in a large mixing bowl. Stir in (see below for variations). Drop by teaspoonfuls onto cookie sheet; bake for 8 to 10 minutes. Wait 1 to 2 minutes before removing from pan to wire racks to cool. Makes about 56 cookies.

    Variations:
    1. Peanut Butter Snickerdoodles--yellow cake mix, t tsp. cinnamon and 2 cups peanut butter chips.
    2. German Chocolate Drops--german chocolate cake mix, 1 cup chopped pecans and 1 cup flaked coconut.
    3. Devil's Food Crunch--devil's food cake mix and 2 cups Nestle Crunch baking pieces.
    4. Raisin Spice Drops--spice cake mix, 1 cup raisins and 1 cup chopped pecans.

    5. Mint Patties--white cake mix, 1 cup vanilla chips andd 1 coarsely crushed 8 ounce package dessert mints (pastel colors)
    6. Tahitian Delights--pineapple cake mix, 1 cup flaked coconut and 1 cup chopped cashews.
    7. Toffee Turtles--yellow cake mix, 1 cup toffee bits and 1 cup chopped pecans.
    8. Choco-M&M Drops--devil's food cake mix, 1 cup mini M&M baking bits and 1 cup chopped pecans.
    9. Cherry Vanilla Drops--cherry vanilla cake mix and 2 cups vanilla baking chips.
    10. Double Fudge Drops--fudge cake mix and 2 cups milk-chocolate chips.

    NOTE: The variations are only as limited as your imagination.

    Yellow Cake Mix Cookies

    1 c Crunchy peanut butter
    2 Eggs
    1/4 c Oil
    1/3 c Water
    1 pk Yellow cake mix
    1 pk Chocolate chips (12 oz.)

    Mix all ingredients together then drop by teaspoon on ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes.

    QUICK PEANUT BUTTER CHOCOLATE CHIP COOKIES

    1 package Duncan Hines Moist Deluxe Classic Yellow Cake Mix
    ½ cup creamy peanut butter
    ½ cup butter or margarine, softened
    2 large eggs
    1 cup chocolate chips

    Preheat oven to 350F. Grease cookies sheets. Combine cake mix, peanut butter, butter and eggs in large bowl. Mix at low speed with electric mixer until blended. Stir in chocolate chips. Drop by rounded teaspoon fulls onto prepared cookie sheets.

    Bake 9 to 11 minutes or until lightly browned. Cool 2 minutes on cookie sheets. Remove to cooling racks.

    Makes about 4 dozen.
