    REVIEWS of recipes made from the “Recipes from Farm Wives Threads”

    Here’s the place to post a review of any recipe you might have made from the Farm Wives weekly thread.
    PLEASE post the recipe & review, along with the link to the original recipe & date it was posted (if possible) Let’s try to keep this to one long on-going thread of reviews.

    I made this for the first time shortly after it was posted. This is a keeper. I have made it several times since then!!!

    EGGNOG POUND CAKE
    1 cup sweet butter or margarine
    2-1/2 cups sugar
    6 eggs
    3 cups all-purpose flour
    1 cup dairy eggnog
    1 cup flaked coconut
    1 teaspoon lemon extract
    1 teaspoon vanilla extract
    1/2 teaspoon coconut extract

    Cream butter and sugar together; beat well at medium speed. Add eggs one at a time; beat well after each addition. Add flour to creamed mixture, alternating with eggnog. Mix just until blended. Stir in coconut and vanilla, lemon and coconut extracts.

    Pour into 10-inch greased and floured tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until wooden toothpick comes out clean near center. Cool 15 minutes, remove from pan and cool on rack.

    SOUR CREAM DATE COOKIE( from Kates Sundays thread)
    2 cups packed brown sugar
    1 cup margarine
    2 eggs
    1 cup sour cream
    1 tsp. vanilla
    1/2 tsp. salt
    1 tsp. soda
    1/2 tsp. cloves
    1/2 tsp. cinnamon
    3 cups flour
    1-1/2 cup chopped dates
    1 cup chopped nuts

    Mix all of the above together and bake at 375 degrees for 12 to 15 minutes.

    I don't remember when I got these date cookies, sorry, but they are good. I don't add the walmuts as dh doesn't like nuts that well, so I have just added more dates.

    I made this 3-4 times this summer. We love it. This is a complete supper for us with some rolls or french bread. I used about 3/4 pound cooked chopped up bacon pieces. Simply yummy!

    Tomato Pie
    3 red tomatoes (sliced)
    1/2 teaspoon basil (or a little more)
    1/2 pound bacon (can use real bacon bits)
    Salt and pepper to taste
    1/4 cup chopped onion
    1/2 cup shredded Cheddar cheese
    1 deep-dish pie crust, unbaked
    1/2 cup mayonnaise
    1/2 cup shredded Cheddar cheese

    Layer the first 6 ingredients in an unbaked pie crust. Mix mayonnaise and shredded cheese. Spread over layered ingredients. Bake at 350 degrees for 45 minutes. Cool 30 minutes to 2 hours before serving.
    Yield: 8 servings

    Hi Kate!

    I saved this to my favorites link! I've got many recipes printed out to try out on my family. Just haven't had the time to cook lately cuz we've been so busy. But when I do, the reviews will be listed here. It's hard to pick from all the wonderful recipes that you've been kind enough to post for all of us to enjoy! ;o)

    Made this today. Believe this was in last weeks recipes - 9-23-07. Didn't do any tweaking to it. Very good.

    Apple Barn Apple Cake

    One cup vegetable oil
    Two eggs
    Two cups sugar
    One and one-half cups all-purpose flour
    One teaspoon baking soda
    One teaspoon baking powder
    One teaspoon salt
    One teaspoon cinnamon
    Three cups apples -- peeled and chopped
    One cup pecans -- chopped
    One cup butterscotch morsels

    Beat together oil, eggs and sugar. Sift together next five ingredients. Add sifted dry ingredients alternately with apples to egg mixture; mix well. Stir in pecans and half of morsels. Spread batter in a greased 9 x 13-inch baking pan. Sprinkle with remaining morsels. Bake at 350 degrees for one hour.

    This past week I made the apple crisp.It is so good. I can't get the search to let me find the recipe, but it was last weeks that Kate posted.

    The only thing different I did was add more apples then it called for. It is a keeper recipe.

    I've made this one several times.....it has replaced another one that I had that was suppose to be a copycat version of Olive Garden's recipe. We like this one better!! Sorry, I don't have the link to the original posting.

    PASTA FAGIOLI


    Serves: 8
    Effort: Easy

    Comments: We liked this version and very quick to assemble!

    Ingredients:
    1 cup onion, chopped
    1 Tbs. olive oil
    2 cans Italian-style stewed tomatoes, undrained
    3 cups chicken broth
    2 cans white beans, undrained (kidney or great northern)
    1/4 cup Italian parsley, chopped
    1 tsp. dried basil
    1/2 tsp. cracked black pepper
    4 oz. small shell pasta
    Grated Parmesan, for garnish
    Croutons, for garnish

    Directions:
    Cook and stir onion in oil in Dutch oven over medium heat for 5 minutes or until tender. Add tomatoes, chicken broth, beans with liquid, parsley, basil and pepper. Bring to boil, stirring occasionally. Reduce to low and simmer covered 10 minutes. Add pasta and simmer 10 minutes more or until pasta is at desired doneness. Garnish with Parmesan and croutons.

    Hi Tode!!!

    I simply copy those recipes from Farm and Ag publications, so I have no idea about missing ingredients or instructions. I DID GOOGLE the recipe title and found it.

    Here are the cooking instructions that I found thru googling:

    Preheat the oven to 350 degrees F. Line a broiler pan with aluminum foil, and position broiler rack on top of pan. Lightly coat the rack with the vegetable oil.
    Combine the brown sugar and cayenne in a shallow dish, stirring to mix well. Press 1 side of each slice of bacon firmly into the spiced sugar to coat well. Arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. If there is any sugar remaining in the dish, sprinkle it on top of the bacon slices evenly. Bake until the bacon is crisp and the sugar is bubbly, 15 to 20 minutes. Transfer to paper towels to drain briefly, then to a plate or serving dish to cool. (Can be made several hours ahead) Serve warm or at room temperature.
