    The ham roll-ups that chocolate queen is talking about, I have posted it a couple days before she answered . It is 2 posts above hers. I just wanted you to know so you wouldn't have to post a question for her or try to look all over for it.

    By the way when is the wedding going to be?

    this is the easy little trick i do for potlucks  

    All you need is soft taco shell I like the big ones cut then in 1/4 4 per shell

    Put shell in a cupcake tin  (well greased) and add anything you would like.

    Beans, taco meat, onion, black olives, or any thing that you put on taco.

    Add cheeae to the top and bake for 10 min  a@ 300  My family and friends go nut when i make these, eat then cold or hot

    Frozen mini meatballs can put in spaghetti sauce, a sweet & sour sauce, make as a swedish meatball       serve with little rolls for sanwiches or the can just eat as is.

     Mix some feta cheese, cilantro and black olives in with cream cheese.  Spread on flour tortialls and then roll them and cut them into pinwheels.

     

    Also good with about a million other combinations like sun dried tomatoes and pesto or roasted garlic and pine nuts.  There's always the super yummy cream cheese and red pepper jelly option too.  With that many people you could do a big assortment.

    This is very good and easy to make. You mentioned they may have a frig so you can keep them there until time to serve. I've even taken these to a picnic so they hold up well and don't need to be put on ice when serving as long as it's not too warm there. Or you can put them out in batches but I think they will be fine.

     

    RANCH HAM ROLL-UPS 

     

    2 8-ounce packages cream cheese, softened

    1 envelope ranch salad dressing mix

    3 green onions, chopped (I diced)

    11 8-inch flour tortillas

    22 thin slices deli ham

     

    In a small mixing bowl, beat cream cheese and salad dressing mix until smooth. Add onions, mix well.

     

    Spread about 3 tablespoons over each tortilla. Then lay 2 slices of ham on top.

     

    Roll up tightly and wrap in plastic wrap. Refrigerate until firm.

     

    Unwrap and cut into 3/4-inch slices.

     

    Yield: 7 1/2 dozen

     

    Note: I also added a cup of grated cheddar cheese to the cream cheese and dressing mix.

     

    This was posted by acidcookGA way back in may of 2003 and says this was from the Dec/Jan 2003 TOH. I have made it serveral times and it is good.

    I would make my favorite kind of cheese ball and put it on top of a slice of cucumber.  With that my people coming you want something that is somewhat cheap and easy to put together.  In your cheese ball I would make it very colorful with peppers and such and on the cucumber I would leave some of the peeling on it for color also.  One other thing I would do is to make the cheese ball and put in a plastic ziplock bag cut off the tip and squeeze on for easy clean up.  Make sure it sits out of the refrigerator before you try to put it on the cucumber slice.

    Black Olive Caviar Bites
    Stuffed Mushroom Caps

    wow...that is a lot of nerve to ask the guest to bring the food- and invite so many.  I would be tempted to bring a can of olives.  I was always taught to work within the budget you have, even if that means cake and punch.

    given that- this will make 60

    Puff pastry cheese straws

    1 sheet of puff pastry

    1 Tbl grated parmesean cheese

    1 Tbl shredded Cheddar cheese

    1/4 tsp garlic salt

    1/2 tsp dried basil, or parsley, or oregano

    1 egg- beaten

     Cut pastry in half to form 2 long rectangles (from the longest end to end)

    -lightly brush sheet of pastry with some of the egg.  Sprinkle with the remaining ingrediants. Fold each sheet in half long-wise again and press down firmly to seal.  Cut each rectangle into 1/2 inch strips. (should get about 12-15 each rectangle)  Cut those in half- twist a few times and place on a cookie sheet with parchment paper.  Bake 12-15 min at 400 till puffed and golden-

    Marinated Crackers


     

    1 1/2 cups oil

     

    1 package dry ranch salad dressing mix

     

    4 teaspoons crushed red pepper

     

    1 box saltine crackers    (small one with the 4 sleeves)


     

           Place crackers in a large plastic container. Mix the other 3 ingredients together and pour over the crackers. Cover and gently turn container over and over until all the liquid is gone. I store the crackers in the container.     
     These turn out crunchy and tasty and crisp.  
     
    Marinated Cheese


     

    ½ cup olive oil

     

    ½ cup white wine vinegar

     

    2-ounce jar diced pimento, drained

     

    3 tablespoons chopped fresh parsley

     

    3 tablespoons minced green onion

     

    3 cloves garlic, minced

     

    1 teaspoon sugar

     

    ¾ teaspoon dried basil

     

    ⅛ teaspoon black pepper

     

    8-ounce block cream cheese,chilled

     

    8-ounce block sharp cheddar, chilled

     

    8-ounce block Monterey Jack cheese, chilled

     

    Fresh parsley for garnish


     

           Combine olive oil, vinegar, pimento, parsley, green onions, garlic, salt, pepper, basil and sugar in a jar. Cover tightly and shake vigorously. Set aside. Cut blocks of cheese into ¼-inch slices. Cut these in half to form squares. Assemble cheese slices like dominoes in rows in a dish. Pour marinade over cheese.Cover and refrigerate overnight. To serve, transfer the cheese slices to a serving platter and spoon marinade over the cheese. Top with fresh parsley. Serve with marinated crackers.

     

          Either recipe is also good by itself. Next time I would use a mild cheese other than cream cheese.  It gets too soft.

     

         These are tasty, can be arranged prettily on serving dishes, and won’t drip onto the bosom of your best wedding finery (or doesn’t anyone else have that problem?).

    Chicken Bites with Sauce

    Puttin’on the Peachtree (Junior League)

     


     

    3 whole boneless chicken breasts, bite-size

     

    1 cup sour cream

     

    ½ cup mayonnaise

     

    ¼ cup chili sauce

     

    2 tablespoons bottled horseradish

     

    2 tablespoons lemon juice

     

    ¼ teaspoon Tabasco

     

    1 teaspoon curry powder

     

    2 tablespoons chutney, minced

     

    4 tablespoons capers

     

    2 tablespoons chopped parsley


     

     

          Bake chicken pieces at 400º with a little butter until done.  Combine with rest and refrigerate several hours or overnight.  Pile in center of serving dish, surrounded by lettuce leaves.  Serve with toothpicks.  Garnish with additional parsley and capers.

    Chicken, Basil and Cashew Pâté

    Bon Appétit

     
     
    3 tablespoons butter

     

    2 skinless boneless chicken breasts (10 ounces), in ½-inch pieces

     

    1 tablespoon chopped garlic

     

    1/3 cup lightly salted cashews

     

    1/3 cup mayonnaise

     

    ½ cup finely chopped onion

     

    ¼ cup grated Asiago cheese

     

    ½ teaspoon Tabasco

     

    ¼ cup chopped fresh basil


     

     

          Sprinkle chicken with salt and pepper.  Sauté with garlic in butter until cooked through, about 3 minutes.  Stir in cashews.  Remove from heat and let cool.  Transfer to processor.  Add all but basil and process until smooth.  Add basil and process just till blended.  Cover with plastic and chill at least 2 hours or overnight.  Makes 2 cups.

                Excellent, got great reviews from all.

    Cornmeal-Olive Bites

    Better Homes and Gardens Holiday Appetizers 1989 


     

    8 ½-ounce Jiffy corn bread mix

     

    1 beaten egg

     

    ½ cup sour cream dip with chives

     

    24 pitted ripe or pimiento-stuffed olives


     

     

          In heavy plastic bag combine mix, egg and dip.  Close bag and mix well using your hands to mix.  Snip off one corner of the bag to form a ¾-inch opening.  Squeeze batter into 24 greased 1 ¾-inch muffin cups, filling each ¾ full.  Press an olive into batter in each cup.  Bake at 400º 10-15 minutes or till done.  Makes 24.

                I have had bad luck with plastic bags so mixed it in a bowl.  I couldn't find chive dip, so I used bacon and onion.  This is one of those recipes you can try any flavor with.

    Smoked Salmon Gougère with Smoked Salmon Butter

    Bon Appétit

     

    Salmon Butter:

     

    ¾ pound smoked salmon

     

    1½ cups butter, room temperature

     

    2 tablespoons minced fresh dill

     

    2 tablespoons fresh lemon juice

     

    ¼ teaspoon pepper


     

     

          Puree salmon in processor.  Blend in remaining ingredients.  Taste and adjust seasonings.  Bring to room temperature before using.

     

     

    Gougère:

     

    1 cup water

     

    1/3 cup butter, in pieces

     

    1 teaspoon dry mustard

     

    ½ teaspoon salt

     

    1/8 teaspoon cayenne

     

    1 cup flour

     

    4 eggs

     

    ¼ pound smoked salmon, finely diced

     

    ¼ cup grated Parmesan cheese

     

    1 egg

     

    1 teaspoon whipping cream


     

     

          Bring water, butter, mustard, salt and cayenne to boil.  Remove from heat and stir in flour all at once.  Mix until dough forms a ball.  Place over medium heat and stir until dough is no longer sticky when pinched.  Cool 5 minutes.  Beat in eggs 1 at a time until dough is smooth.  Blend in salmon and Parmesan.  Pipe in 1-inch rounds onto parchment-lined baking sheets, spacing 2 inches apart.  Beat egg with cream and glaze tops of puffs.  Bake at 425º until puffed, golden and firm, about 25 minutes.  Turn off heat and open oven door.  Pierce each puff with sharp knife.  Let stand in oven 10 minutes to dry.  Cut off caps and reserve.  Pull out any dough centers.  Pipe salmon butter into puffs.  Top with caviar if desired or replace caps.  Garnish with dill sprigs. Makes about 48.

                I didn’t use the caps and omitted caviar.  It was delicious.  I made half a recipe.  They are mini savory cream puffs.
