    Help! I need a few new recipes for...

    My DH is a member of our Fire Dept, this weekend they are having a staged emergency. A bus disaster is what they are working on, they will be having the other fire depts, ambulances & rescue workers from the other towns be a part of this...I wanted to see if anyone has any really really good bar or cookie recipes. The bars & cookies will be easiet for the guys & gals to grab...(after the tranning of course) I am looking anything that is fantastic, that is maybe a little more different than chocolate chip cookies & brownies. I appreciate all your help!

    This is a great recipe for brownies! Everyone was talking about these for days! You can make these in a mini muffin pan using one Rolo and bake for 10 mins.

    CHOCOLATE CARAMEL BROWNIE CUPS


    Serves: 12
    Effort: easy
    Comments: Recipe made up by LaDonna


    Ingredients:
    1 pkg. (1 lb. 6.5 oz.) Betty Crocker Supreme Brownie Mix
    24 chocolate covered caramel candy (Rolo's)


    Instructions:
    Mix brownie batter according to package directions.
    Fill paper-lined muffin cups 2/3 full.
    Remove wrappers from Rolo candy. Press 2 Rolo's (side by side) down into batter until batter meets the top edge of the candy.
    Bake 350 for 20-25 min.
    Let cool completely.

    Banana Caramel Bars

    Prep: 20 min.
    Bake: 35 min.
    Makes: 24 Bars
    2-1/2 cups all-purpose flour
    1 cup sugar
    1 teaspoon baking powder
    1 cup margarine, cubed
    1 large egg, beaten
    3 extra-ripe, medium DOLE® Bananas, peeled
    3/4 cup caramel topping
    Combine flour, sugar and baking powder in a bowl. Cut in marg. with pastry
    blender until mixture resembles coarse meal. Slowly stir in egg, mixing with
    a fork until crumbly. Pat half of mixture in 13 x 9" baking pan to form
    crust. Blend bananas in blender (1c). Stir together bananas with caramel
    topping. Pour over crust, spreading evenly. Sprinkle remaining crust mixture
    over filling. Pat gently. Bake at 375, 35 min, or until golden brown. Cool
    on wire rack. Cut into bars when cooled.

    Apple Butterscotch Bars
    2 c. Sugar
    1 c. Oil
    3 eggs, beaten
    1 t. Vanilla extract
    2-1/2 c. All-purpose flour
    2 t. Baking powder
    1 t. Baking soda
    1 t. Salt
    1 t. Cinnamon
    3 c. Apples, cored, peeled and chopped
    1 c. Chopped nuts
    1 c. Butterscotch chips

    Combine sugar, oil, eggs and vanilla in a large bowl. Mix in flour, baking powder, baking soda, salt and cinnamon; mix well. Stir in apples and nuts. Spread in a lightly greased 13"x9" baking pan; sprinkle with butterscotch chips. Bake at 350 degrees for 40 to 45 minutes. Makes about 3 dozen.

    CHERRY SPICE BARS

    1 jar (10 oz.) stemless maraschino cherries
    1 spice cake mix
    ¼ C. Butter or margarine, melted
    ¼ C. Firmly packed brown sugar
    ¼ C. Water
    2 eggs

    GLAZE:
    1 C. Powder sugar
    1 TBSP lemon juice
    1 - 2 tsp. Milk

    Drain cherries; discard juice or save for another use. Cut cherries in half. Combine dry cake mix, melted butter, brown sugar, water and eggs in large mixing bowl; mix with spoon or electric mixer until well combined and smooth. Stir in cherries. Spread batter into greased 13x9 baking pan.

    Bake in preheated 375º oven 20-25 min. Or until top springs back when lightly touched. Let cool in pan on wire rack.

    For glaze, comine powder sugar and lemon juice; add enough milk to make a thick glaze. Drizzle glaze over cake. Allow glaze to set. Cut into bars. Store up to one week in air-tight container with sheets of waxed paper between layers.

    Makes 2 dozen bars.

    Peanut Butter No-Bake Cookie Recipe
    This is a chewy, peanut butter-rich cookie made with oats. Both kids and adults will like this.
    Again, this is a stovetop recipe. From ingredients to cookies on the sheet took us about ten minutes.
    Ingredients
    2 cups brown sugar
    1/2 cup evaporated milk
    1/2 cup butter
    1/2 teaspoon vanilla extract
    1 cups peanut butter
    3 cups quick rolled oats
    Directions
    1. Add the brown sugar, evaporated milk, and butter to a heavy saucepan. Cook over medium-high heat, stirring continually, until the mixture comes to boil. Cook for one minute longer.
    2. Remove from heat, stir in peanut butter, quick oats, and vanilla. Stir until the mixture begins to cool.
    3. Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator.

    PECAN PIE BARS
    1 pkg. Yellow cake mix
    1/2 c. Butter
    4 eggs
    1/2 c. Brown sugar
    1 1/2 c. Dark corn syrup
    1 tsp. Vanilla
    1 c. Chopped pecans

    Reserve 2/3 cup dry cake mix.

    Crust:
    To remaining dry cake mix, add the butter and one of the eggs. Mix until crumbly. Press into 9x13 pan. Bake at 350 degrees until brown.

    Filling:
    Add reserved cake mix, brown sugar, remaining eggs, corn syrup, vanilla and pecans; mix well. Pour over browned crust and return to oven and bake for 30 to 35 minutes longer. Cool; slice into bars.

    Cookie Bars
    3/4 c butter or margarine, softened
    2 1/2 c brown sugar, packed
    3 eggs
    1 tsp vanilla extract
    2 3/4 c flour
    2 tsp baking powder
    1/4 tsp salt
    1 c semisweet chocolate chips
    1 c sweetened flaked coconut
    1/2 c chopped pecans
    1/2 c diced dried cherries
    Topping:
    3/4 c chocolate chips

    Preheat oven to 350. Grease 9x13 baking pan.
    In a mixing bowl, cream butter and sugar. Add eggs and vanilla. In a separate bowl combine flour, baking powder and salt; add to cream mixture at low speed or by hand. Fold in the rest of the ingredients. Spread into pan. Press down with wet fingertips if needed.
    Reduce heat to 325 immediately and bake 40-45 minutes till light golden brown. Sprinkle topping of chips on the hot bars and let melt slightly and spread to cover. Cool 20 minutes and then freeze for at least an hour. Cut into bars. No need to store in freezer.

    Ranger Cookies

    1 cup of margarine
    2 eggs
    1 cup of white sugar
    1 cup of brown sugar
    1 tsp of vanilla
    1 tsp of baking soda
    1/2 tsp of baking powder
    1/2 tsp of salt
    2 cups of flour
    2 cups of quick oats
    2 cups of Rice Krispies
    1 cup of shredded coconut

    Cream margarine and sugars. Add eggs and vanilla. Mix until smooth. Add flour, sifted with baking soda, baking powder and salt. Add Rice Krispies, coconut and oats. Drop by teaspoonfuls onto cookie sheets. Press down with fork. Bake at 375*F for 7 minutes or until golden brown. If you chill the dough it is easier to handle.

    Sometimes I will add and 1/2 to 1 cups of chopped walnuts!

    1/4 cup of butter or margarine
    1/2 cup of peanut butter
    1 cup of chocolate chips
    1 bag of colored mini marshmallows

    Melt butter and peanut butter in a large saucepan. Stir in chips until melted. Cool mixture until you can hold your hand on the bottom of the pot. Add marshmallows and stir until coated. Pack into a greased 9x9 pan. Refrigerate!

    Cheerio Bars

    1/2 c peanut butter
    1/2 c sugar
    1/2 c honey
    3 c Cheerios
    peanuts or chocolate chips

    Bring sugar and honey to a boil in a saucepan. Remove from heat, stir in
    peanut butter until well blended. Pour in cheerios and mix until well coated.
    Spread in buttered 9 x 13 pan and let cool. cut in squares.

    Raspberry Bars
    Ingredients:

    2 1/2 c. all-purpose flour
    1 c. sugar
    1 c. chopped pecans or walnuts
    1 c. butter, softened
    1 egg
    1 10-ounce jar raspberry preserves

    Directions:
    Grease a 9x13-inch baking pan. In a large mixer bowl, combine all
    ingredients except preserves. Beat at low speed until mixture is crumbly,
    about 2 to 3 minutes. Reserve 1 1/2 c. of crumb mixture. Press remaining
    crumb mixture into baking pan. Spread preserves to within 1/2 inch from
    edges of the unbaked crumb mixture. Crumble remaining crumb mix over
    preserves. Bake in a preheated 350-degree oven for 40 to 50 minutes or until
    lightly browned. Cool completely and cut into bars.

    Sopapilla Cheesecake Bars
    Ingredients:
    2 cans crescent rolls
    8 ounces cream cheese
    1 c. sugar
    1 tsp. vanilla
    1/2 c. sugar
    1 tsp. cinnamon
    1 stick butter, melted

    Directions:
    Spread one can of crescent rolls on bottom of 9x13 inch pan. Blend sugar,
    vanilla, and cream cheese. Spread cream cheese mixture on bottom layer of
    rolls. Take the other package of rolls and spread on top of the cream
    cheese. Sprinkle with mixture of 1/2 c. sugar and 1 tsp. cinnamon. Pour
    melted butter over the top layer. Bake for 30 minutes at 350 degrees.

    Chocolate Overdose Cookie Bars


    Ingredients:

    1 1-pound pkg. Oreo® cookies
    1/4 c. butter, melted
    1 14-ounce can sweetened condensed milk
    1 tsp. vanilla
    2 c. semi-sweet chocolate chips (I find the mini chips melt better)

    Directions:

    Preheat oven to 325 degrees. Grease a 9x13 inch pan. Set aside 6 cookies and
    grind the remaining cookies in a food processor (or crush in baggie with
    rolling pin). Mix together cookie crumbs and butter until well blended.
    Press into bottom of pan. Add 1 c. of chocolate chips to sweetened condensed
    milk and vanilla. Melt in microwave, mixing frequently until smooth. Pour
    chocolate mixture over crumb crust. Sprinkle the remaining chocolate chips
    over the top and break remaining 6 cookies into pieces and sprinkle over the
    chocolate chips. Bake for 20-25 minutes. Allow to cool completely before
    cutting into bars.
