    cranberry jello salad

    Does anyone have a tried and true recipe for cranberry jello salad?

    2(3 oz.) pkg. cherry jello, 1 cup cold water, 2 cups boiling water. 2Tbsp.lemon juice, 1 can whole cranberry sauce, 1/2 cup chopped pecans. Dissolve jello in boiling water, add cold water and lemon juice. Chill until partial set. Fold in cranberry sauce and pecans. Chill until set. Topping---1 (8 0z.) cream cheese, 1/2 cup sour cream, 1 cup powdered sugar, 1/2 tsp. vanilla. Mix well and sptead on top of jello mixture and chill.

    Unusual Cranberry Salad

    2 pkg. cherry jello
    2 cups hot water
    2 cans whole berry cranberry sauce
    1- 10 ounce pkg frozen strawberries thawed
    1 131/2 oz. can crushed pineapple
    miniature marshmallows
    1 cup juices and water

    Dissolve jello in hot water. Add juices from fruit and enough water for 1 cup. Chill til starts to set. Add fruit & marshmallows.

    This is a very old recipe. I think the smallest size of strawberries is now 15 ounces and it turns out good.

    This is the recipe for the salad I'm making for TG and Christmas dinner:

    THREE LAYER RUBY RED SALAD
    3 OZ package raspberry gelatin
    1 c. boiling water
    10 oz package frozen raspberries in syrup
    Dissolve gelatin in boiling water. Add frozen berries and stir until thawed and separated. Pour into lightly oiled 9” square pan. Place in refrigerator to thicken. (I use Pam on my dish)
    1 cup (8 OZ) sour cream
    3-OZ package cream cheese, softened (put unwrapped in microwave for about 15 seconds to soften)
    2 T. sugar
    ½ cup chopped pecans
    Mix all ingredients together and carefully spread on top of thickened raspberry gelatin. Chill.
    3-OZ package cherry gelatin
    1 cup boiling water
    Small can of crushed pineapple, drained
    16-OZ can whole-berry cranberry sauce (mashed up)
    Dissolve cherry gelatin in boiling water. Stir in drained pineapple and cranberry sauce. Allow to thicken slightly at room temperature. Carefully spoon over sour cream mixture. Chill until firm. Servings can be garnished with whipped cream if desired.
    This is good with turkey, ham, or BBQ.

    Every time I fix this and take it somewhere, everyone wants the recipe.

    I have a Cranberry Jello Salad recipe from an elderly aunt that I use.

    Dissole 1 small pkg Strawberry Jello in 1/2 cup boiling water. While it cools chop 1 pkg. fresh cranberries. Add to cranberries . . . 1 pkg. small marshmellows, 1 large can crushed pineapple, drained, 1 small container of Cool Whip, 1/2 cup sugar, and the cooled Jello. Refrigerate and after it has set for awhile blend all together and replace in refrigerator until ready to use. I usually make the night before.

    Good luck! and happy eating. My kids and husband likes this instead of cranberry sauce with the turkey and dressing.

    Cranberry Salad

    2 - 3 oz. pkgs. of raspberry Jell-O
    2 cups of boiling water
    1 can of whole cranberry sauce
    1  20 oz. can (undrained) crushed pineapple

    Mix together the Jell-O powder and boiling water in a Pyrex dish and put in the refrigerator to cool (NOT CONGEAL). While you are waiting, mix together the cranberry sauce and pineapple in a separate bowl.

    Once the Jell-O is cool, take it out of the refrigerator and fold in the fruit mixture. Return to the refrigerator and cover when set.

    Cranberry Mousse

    1 - 20 oz can crushed pineapple in its own juice
    1 - 6 oz strawberry jello
    1 c water
    1 - 16 oz can whole berry cranberry sauce

    3 T lemon juice
    2 c sour cream
    1/2 c chopped pecans


    Drain pineapple. Add juice to jello in 2 qt saucepan. Stir in water. Heat to boiling. Stir to disolve jello. Remove from heat. Blend in cranberry sauce. Add lemon juice.

    Chill til mixture thickens slightly. Blend in sour cream. Fold in pineapple and nuts.

    Chill til firm.

    We live about 100 miles from Cape Cod, which is known for its cranberries. When we spent a weekend there, we toured the Cranberry World Visitors Center, which is where I found this recipe. When I made it for our fellowship group at church, everyone wanted the recipe. You’ll be surprised it’s so easy to make with just four ingredients.

    SERVINGS: 6

    Cranberry Mousse Recipe
     

    Ingredients:

    • 1 can (16 ounces) jellied cranberry sauce
    • 1 cup cranberry juice
    • 1 package (3 ounces) cranberry or raspberry gelatin
    • 1 cup heavy whipping cream, whipped

    Directions:

    In a large saucepan, bring the cranberry sauce and juice to a boil; cook and stir until smooth. Stir in the gelatin until dissolved. Cool slightly; transfer to a bowl. Refrigerate for 1 hour or until mixture begins to thicken.
        Fold in the whipped cream. Spoon into dessert dishes. Chill for 3-4 hours or until firm. Yield: 6 servings.
