    Chocolate glaze

    Hi,
I made the Vanilla Cream Puffs yesterday from the August/September Tast of Home magazine and everything turned out great except the chocolate glaze. I tried it three times and every time, it turned out rock hard. I put it on low heat measured according to the recipe and I could not get it to work. Any suggestions?

    Thanks,
    Plumb

    Try this recipe:

    2 T. butter or margerine
    1/4 C. cocoa
    3 T. water
    1/2 tsp. vanilla extract
    1 1/4 C. powdered sugar

In small saucepan over low heat melt butter. Stir in cocoa and water. Cook, stirring constantly, until mixture thickens. DO NOT BOIL. Remove from heat. Stir in vanilla. Gradually add powdered sugar, beating with wire whisk until smooth. Add additional water, 1/2 tsp. at a time until desired consistency.
Good Luck and let me know how this turns out.

It was probably the quality of your chocolate chips. I think they put in paraffin so that the chips won't disintegrate in cookies. Next time, either use the equivalent weight in good semi-sweet chocolate or use a cocoa recipe.

HI plumb. Water could also be a problem with chocolate. Be sure your pan is dry (as well as clean :-)) before starting.

How about hot fudge sauce? :-)
