    Authentic AMISH RECIPES to share anyone...could you please post them here

    There has been some discussion on Amish recipes lately I thought it would be fun to post them under a subject title so we can find them in one place later.... They all sound so good, the ones posted already so I thought we could add to it in one location..... here is my contribution...which unfortunately is the only authentic one I have.

    AMISH SUGAR COOKIES

    1 cup sugar
    1 cup powdered sugar
    1 cup shortening (crisco)
    1 cup vegetable oil
    2 eggs
    4 cups flour
    1 teaspoon soda
    1 teaspoon cream of tartar
    2 teaspoons vanilla
    3/4 teaspoon salt

    In a large bowl, cream crisco, oil and vanilla, mix well. Add eggs adn both sugars mix well. Add soda and salt and gradually flour, beat well. Roll in balls and roll the balls in granulated sugar, place balls on cookies sheet and flatten slightly with a glass bottom dipped in sugar. Bake at 350 for 8-10 minutes or until lightly browned.

    This cookie bakes thin..crispy if you bake it long enough. (like a wafer cookie)

    MOLASSES GINGER COOKIES

    1 cup lard (or butter)*my Amish friend uses lard & so do I
    1 cup sugar
    1/3 cup molasses
    2 eggs
    2 1/2 tsp soda
    2 1/2 cups flour
    1 tsp cloves (or allspice)
    1 tsp cinnamon
    2 tsp ginger
    pinch salt

    Cream lard & sugar & molasses. Mix in eggs, add rest of ingredients

    These are spicy & SO good! I got the recipe from my Amish friend's mother...who has 14 children and over 100 grandchildren (oh, and about 12 great-grandchildren too!)

    Refrigerate dough 1 hour before baking. Place the balls of dough with plenty of space in between since these SPREAD out!

    here is one of my favorites to use

    Mennonite Pizza Dough

    One Pizza
    1 1/3 c flour
    1 tsp baking powder
    2/3 tsp salt
    ½ c milk
    2 Tbs. oil

    Three Pizzas
    4 c flour
    6 tsp baking powder
    2 tsp salt
    1 ½ c milk
    2/3 c oil

    Mix dry ingredients first, then add liquids. Knead until smooth. Roll onto greased 12 inch pizza pans.

    Amish BarB-Q Sandwiches

    3 lb hamburger
    3 lb beef (boiled or 1 quart chunk canned beef)
    1 ½ c ketchup
    1 onion, chopped
    ¼ c Worcestershire
    ¼ c brown sugar
    2 cans chicken gumbo soup
    Salt & pepper to taste

    Brown hamburger & onion; drain. Boil beef until tender & break into stringy bits. Combine beef & hamburger with other ingredients. Simmer for 45 minutes to an hour over low heat. This lets the flavor become savory throughout. This can be frozen for later.

    Amish Big Boy Cheese Burgers

    1lb ground beef
    1 t salt
    ½ t pepper
    1 T Worcestershire
    ¼ c ketchup
    ¼ c finely chopped onion
    ½ c corn flake crumbs
    ½ c evaporated milk
    Hamburger buns
    American cheese

    Mix ground beef, salt, pepper, Worcestershire, ketchup, onion, corn flake crumbs, evaporated milk in a 2-quart bowl. Mix lightly but thoroughly. Spread on hamburger buns, covering to edges. Bake at 400o for about 25 minutes or until beef is done. Top with cheese the last few minutes of baking.

    SIMPLE MORNING COFFEE CAKE

    1 cup sugar
    shortening lump the size of an egg
    1 cup cold water or milk
    1 egg
    2 cups flour
    2 teaspoons baking powder
    dash salt
    1 teaspoon vanilla

    Mix all together.
    Sprinkle with brown sugar, cinnamon and specks of butter.
    Bake in 2 greased pie pans at 350 degrees or until lightly browned.
    Enjoy in morning with a cup of coffee.

    Had this in an Amish home, served with homemade bread. Amish Peanut Butter. 3/4 c. sugar. 3/4c. brown sugar, 1/2c. molasses 1cup water
    , Boil together 2 minutes cool then add 1-18oz jar peanut butter and 1-8oz jar marshmallow creme.Stir until blended

    AMISH SWISS MEAT LOAF
    1 egg
    1/2 c. evaporated milk
    1/2 tsp. rubbed sage
    1 tsp. salt
    1/2 tsp. black pepper
    1 1/2 lb. lean ground beef
    1 c. Ritz cracker crumbs
    3/4 c. grated Swiss cheese
    1/4 c. finely chopped onion
    2-3 strips bacon, cut in 1" pieces

    Preheat oven to 350 degrees. Beat the egg in a large bowl. Add evaporated milk, sage, salt and pepper, and mix. Add beef, crumbs, 1/2 cup of the cheese and the onion; blend. Form into a loaf and place in a 2 quart rectangular baking dish. Arrange bacon pieces on top of loaf. Bake 40 minutes. Sprinkle remaining cheese on top and bake 10 minutes longer.

    I got this out of our newspaper. The article was called The Amish Cook by Elizabeth Coblentz.

    Cabbage Casserole
    3 cups fresh cabbage, shredded
    1 pound hamburger, sauted and drained
    3/4 cup diced onion
    1 teaspoon salt
    1/2 teaspoon pepper
    1/4 teaspoon garlic salt
    10 1/2 oz. can of tomato soup
    1 soup can of water
    1 cup cooked rice
    1 tablespoon brown sugar
    1 tablespoon lemon juice
    1 cup shredded Cheddar cheese
    Shred cabbage and place in a greased 2 quart casserole. Mix in meat and onions. Then stir in rest of ingredients, except cheese. Stir the whole casserole well. Cover and bake at 350 degrees for one hour. Top with cheese before serving.

    My family love this one and I serve it monthly. Hugs, Peggy

    I have four Amish cookbooks that were purchased from the Country Store. I paged through them, & I decided to type out the recipes that most caught my eye. This all sounds like good home cookin'.


    HAMBURGER CHEESE DIP
    1 pound hamburger
    1 can tomato soup
    1 teaspoon chili powder
    ½ teaspoon garlic powder
    1 pound Velveeta cheese
    1 can cream of mushroom soup
    1 teaspoon Worcestershire sauce
    1 cup peppers (bell peppers)

    Brown hamburger with peppers; drain. Add remaining ingredients. Heat all until cheese is melted. Serve with Doritos.

    FEATHER-LIGHT MUFFINS
    1/3 cup shortening
    ½ cup sugar
    1 egg
    1-½ cups cake flour
    1-½ teaspoons baking powder
    ½ teaspoon salt
    ¼ teaspoon ground nutmeg
    ½ cup milk
    TOPPING:
    ½ cup sugar
    ½ cup butter, melted
    1 teaspoon ground cinnamon

    Cream shortening, sugar, & egg. Combine dry ingredients. Add to creamed mixture alternately with milk. Fill greased muffin tins 2/3 full. Bake at 325° for 20-25 minutes, or until golden brown. Let cool 3 or 4 minutes. Meanwhile, combine sugar & cinnamon. Roll warm muffins in melted butter, then in sugar mixture. Serve warm. 8 to 10 muffins.

    BAKED OATMEAL
    ½ cup butter, melted
    ¾ cup brown sugar
    2 eggs, beaten
    1 teaspoon salt
    3 cups quick oats
    1 teaspoon cinnamon
    2 teaspoons baking powder
    1 cup milk

    Mix everything together & pour into a greased 8 inch square pan. Bake at 350° for 30 minutes. Serve with warm milk or fresh fruit.

    MEXICAN CORNBREAD
    2 cups cornmeal
    1 cup flour
    2 teaspoons baking powder
    1 teaspoon salt
    1-½ grated cheese (cheddar, Monterey Jack, etc.)
    ½ cup or less hot peppers
    ¼ pound bacon, fried crisp & crumbled
    ¼ cup pimentos
    2-½ cups sweet milk (milk)
    ½ cup cooking oil
    3 eggs, beaten
    1 large onion, finely diced
    2 teaspoons white sugar
    1 cup cream style corn

    Mix together. Bake at 400° for around 35 minutes. Delicious served with:

    1 pound hamburger, browned & drained
    1 can kidney beans
    1 package taco seasoning

    Stir together & serve with cornbread.

    tmw03........My mom use to make corn fritters exactly like that!! Oh.......they were so delicious. We would have them with fresh sliced tomataoes and fresh cooked green beans all out of the garden. The best!!! Thanks for posting!!
