    Looking for Libby's Pumpkin Bread

    Hi All

    I had a reciepe about 15-20 years back that I lost that I would like to see if anyone out there might have.

    It was titled Libby's Pumpkin Bread.

    It was the best pumpkin bread I have ever had. It came as part of one of those "Recipe Clubs". It was printed on a 4 x 5 card with the picture on the front and recipe on the back. It was a pretty dark bread with cloves, nutmeg, cinnamon. I think it might have been called Libby's pumpkin bread because it used Libby's pumpkin.

    Libby's Pumpkin Bread

    3 1/2 cups flour
    2 cups sugar
    2 teaspoons soda
    1 1/2 teaspoon salt
    1 teaspoon each: cinnamon, ginger, cloves and nutmeg
    1 cup chopped nuts
    1 cup vegetable oil
    4 eggs
    2/3 cup water
    1 can (15 oz) pumpkin (Libby's only -other varieties are too watery)

    Sift dry ingredients and mix well.
    Mix in nuts.
    Beat together remaining ingredients and combine with dry ingredients.
    Mix until smooth.
    Pour into two greased bread loaf pans and bake at 350ºF from 55 to 60 minutes or until a wooden tester comes out clean.

    I just made this bread with some changes and we really liked it. I used 1 1/2 c of mashed sweet potatoes instead of pumpkin and 3/4 c of cranberries cut in half. Next time will make the cranberries a full cup.
