Hi Barb. I made about 40 pints of this last year and it is gone. My husband says it is the best salsa he has ever tried, and we have tried many over the years, store bought and homemade. I hope you try it, and enjoy it as much as we do. Linda
SALSA
12 cups chopped tomatoes
3 cups chopped red peppers (sweet)
3 cups chopped green peppers
3 cups chopped hot red peppers
1 cup finely chopped jalapeños
1 whole bud garlic, chopped (we find that 5 or 6 cloves are plenty)
1 cup sugar
1 cup vinegar
6 tsp salt
5 small cans tomato paste
Simmer all together in a large pot for about 3 hours. I canned mine but I’m sure it would freeze well. 15 minutes boiling water bath for pints. Makes about 9 pints.
**We grew some hot peppers, and they are deadly. We only used about 3 of them, and no jalapeños because these other things were so hot. I think they’re cayenne peppers. WOW.
