    ???ABOU SALSA

    I am looking for a REALLY, REALLY good salsa. It can be homemade or store bought. I seem to be forever buying and trying salsa and can't find something that's really good. I've tried Paul Newman's and didn't like it, too sweet. El Paso too pasty.

    Looking for suggestions!

    Hi Barb. I made about 40 pints of this last year and it is gone. My husband says it is the best salsa he has ever tried, and we have tried many over the years, store bought and homemade. I hope you try it, and enjoy it as much as we do. Linda

    SALSA

    12 cups chopped tomatoes
    3 cups chopped red peppers (sweet)
    3 cups chopped green peppers
    3 cups chopped hot red peppers
    1 cup finely chopped jalapeños
    1 whole bud garlic, chopped (we find that 5 or 6 cloves are plenty)
    1 cup sugar
    1 cup vinegar
    6 tsp salt
    5 small cans tomato paste

    Simmer all together in a large pot for about 3 hours. I canned mine but I’m sure it would freeze well. 15 minutes boiling water bath for pints. Makes about 9 pints.

    **We grew some hot peppers, and they are deadly. We only used about 3 of them, and no jalapeños because these other things were so hot. I think they’re cayenne peppers. WOW.

    i know exactly what you mean. i've wondering why the quality of salsa isn't what it used to be. i did find a Salsa Seasoning Mix at our local speciality grocery store. You add tomatoes and red onion and it's fabulous. www.concordfoods.com

    Here is the one I use.

    2 (28 oz.) cans diced tomatoes, undrained
    2 bunches green onions, diced
    2 onions, diced
    4 oz. can diced green chiles
    4 oz. can diced jalapenos
    2 T. finely diced fresh cilantro
    (leaves only)
    salt and pepper to taste

    Combine all ingredients and blend well. Keep in refrigerator. It is better if it has an hour or two for the flavors to blend. This makes approximately 1/2 gallon of medium salsa. When I take it to work, it disappears faster than you
    can imagine. If you want a milder salsa, use 2 cans green chiles. If you want a hotter salsa, use 2 cans
    jalapenos.

    I like Pace salsa. I use it for dipping and in many recipes I make. It can fill in flavors in a dish that just seem quite right. There is a website for it, pacefoods.com. You can get many recipes there.

    I posted my green salsa earlier today for bonnygene MI, if you're interested. The original recipe used red tomatoes, we just prefer the green instead.

    Thanks Dl. I'm going to try this when I have tomatoes this fall. I like to make mine from fresh roma tomatoes.
