    GERMAN POTATO SALAD
    6 c. cubed or sliced cooked, hot potatoes
    6 slices bacon
    1 small onion, finely chopped
    1/4c. vinegar
    3/4c. water
    2 Tbsp. sugar
    1 tsp. dried parsley flakes
    1/2 tsp. salt
    1/8 tsp. pepper
    Keep potatoes hot after cooking. Fry bacon, remove and crumble. Fry onion in bacon fat until clear and soft. Stir in flour. Add vinegar and water. Stir until thickened. Stir in remaining ingredients. Add bacon. Pour over cubed potatoes. Toss and serve.

    Hi - Here is my Grandmothers recipe for German Potato Salad. It's very simple, but delicious.

    5 to 6 potatoes, boiled and diced
    1/2 cup chopped onion
    1 or 2 hard boiled eggs, chopped
    1/2# bacon, diced and fried until
    crisp (retain a couple of table-spoons of grease)
    1/2 cup sour cream (aprox)
    salt & Pepper to taste

    Keep spuds hot and add all ingredients at the same time, including the bacon grease. Toss with sour cream, let stand for about 1/2 hour, toss again and add more sour cream if needed. Refrigerate any leftovers.

    here's a microwave version

    Wash and pierce 4 med. potatoes through with fork. Place on paper towel in microwave oven. Microwave at high 10-12 min, turning over and rearranging after 4 min., or until tender. Remove from oven, cool slightly, peel potatoes and cut in 1/8 in. slices to make about 4 cups.(Make sure it's 4 cups!) In 2 Qt. casserole cut 6 strips of bacon in small pieces. Cover with paper towel. Microwave at high about 6 min., stirring after 3 min., until crisp. With slotted spoon remove bacon to paper towels to drain. Set aside. Stir 2 T. flour, 1/4 c. sugar, 1 1/2 t. salt, 1/2 t. celery seed, 1/8 t. pepper into bacon fat until smooth. Microwave at high 1-2 min, until bubbly, stirring after 1 min. Add 1 c. water and 1/2 c. vinegar to flour mixture. Microwave at high 4 min., until mixture boils and thickens, stirring after 1 min. Remove from oven and stir smooth. Add potatoes and bacon; stir gently so potatoes hold their shape. Cover casserole and let stand until ready to serve. 4-6 servings.

    Zesty Potato Salad

    Makes 6 servings


    2 pounds red potatoes
    1/2 cup mayonnaise
    1/2 cup sour cream
    2 tablespoons prepared horseradish
    1 tablespoon chopped fresh parsley
    1/2 teaspoon salt
    1/2 teaspoon pepper
    3 bacon strips -- cooked and crumbled
    4 hard-cooked eggs -- chopped
    2 green onions -- sliced
    Peel potatoes; cook in boiling salted water for 20 minutes or until done. Drain and cool. Cut potatoes into cubes. In a large bowl, combine mayonnaise, sour cream, horseradish, salt and pepper; mix until smooth. Stir in potatoes, bacon, eggs and onions. Cover and chill up to 24 hours.

    SNAPPY POTATO SALAD

    8 medium potatoes, peeled, cubed and cooked
    8 bacon strips, cooked and crumbled
    1 cup chopped onion
    3/4 teaspoon salt
    2 cups mayonnaise
    1/4 cup prepared mustard
    1/4 cup prepared horseradish
    1 cup slice celery
    1/4 cup shredded carrot

    In a large bowl, combine potatoes, bacon, onion and salt; set aside. In a small saucepan, combine mayonnaise, mustard and horseradish; cook until heated through, stirring constantly. add celery and carrot; mix well. Pour over potato mixture and toss lightly to coat. Serve warm Yield: 8-10 servings.

    There is a version which I found going through my magazines which hasn't been posted yet. This is from the "When the gang's all here" column on page #54 from the June/July 1995 Taste Of Home magazine issue-contributed by Ramona Hook Wysong. She says in the column, "with horseradish for tang, mayonnaise and sour cream for smoothness and bacon for crunch, you have a truly memorable potato salad," assures this Paducah, Kentucky reader.

    Yield: 60-70 Servings

    ingredients:

    16 lb Baking potatoes, peeled, cooked & cubed
    32 Hard-cooked eggs, chopped
    2 lb Sliced bacon, cooked & crumbled
    16 Green onions or Scallions, thinly sliced
    4 cups Mayonnaise or salad dressing
    4 cups (32 oz.) Sour cream
    1 cup Prepared horseradish
    1/2 cup fresh Parsley, chopped
    2 T Salt
    2 T Pepper

    Toss potatoes, eggs, bacon and onions. Combine remaining ingredients; mix until smooth. Toss with potato mixture. Chill several hours.

    8 Medium Boiled potatoes
    1 cup celery Chopped
    1/2 cup red onion Chopped
    2 egg's
    1 package bacon bit's (optional)

    Ranch Dressing

    1 pkg. Ranch dressing mix (dressing not dip)
    1/2 Cup Mayo
    1/4 cup Water

    Stir all of this together and pour over the the other ingrediants.

    Hint:
    I usually make a bigger batch then this I sometimes Double or triple the recipe. One thing I have found is I always make more dressing then needed. Makes the dish much creamier which i think tastes better. So if you follow this amount here i would actually mix together 2-3x everything on the dressing ingrediants. (does this make any sense lol)

    Mom's German Potato


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 large red potatoes -- sliced 1/4 inch thick
    6 slices bacon -- chopped
    2 tablespoons flour
    1/4 cup sugar
    1 1/2 teaspoons salt
    1/2 teaspoon celery seed
    1/8 teaspoon ground pepper
    1 cup water
    1/2 cup vinegar

    Steam sliced unpeeled potatoes until done, approximately 10 minutes on high

    Fry bacon until very crisp, remove from grease and drain on paper towels

    Add to the bacon grease, flour, sugar, and seasonings microwave 1 - 2 minutes until smooth and bubbling

    Add water and vinegar microwave 5 minutes on high. Combine with potato mixture and toss. Serve hot

    NOTES : I never can make just a single recipe of this. Actually, it gets even better with reheating.

    2 pounds potatoes

    paprika for garnish

    Boil potatoes in salted water the night before making the salad. Drain and refrigerate. The following day, peel potatoes and cut into chunks. Place cooked potato chunks in large bowl along with the chopped egg. In another bowl, combine remaining ingredients. Pour mayo mixture over potatoes and egg and toss genlty to coat. Cover and refrigerate at least two hours prior to serving. Garnish with paprika just prior to serving.

    "Maine" Potato Salad

    10 lbs. Maine Potatoes
    1 1/2 doz. eggs
    1 1/2 cups celery, finely chopped
    ½ cup parsley, chopped
    2 large peppers, finely chopped
    3 bunches green onions, bottoms and ½ of tops
    1 1/2 tbsp. yellow mustard
    1 1/2 tbsp. sugar
    1/2 qt. mayonnaise
    3 small jars chopped pimentos
    1/2 qt. sweet relish
    3 oz. salad olives, chopped
    3/4 tbsp. paprika
    1/2 tbsp. salt
    1/2 tbsp. pepper
    1/2 tbsp. garlic salt
    3 oz. chopped "hot" pickled cauliflower

    Wash potatoes, boil, then cool. Hard boil eggs, cool, peel, finely chop. Peel potatoes, cut into small pieces; add chopped eggs, seasonings. Mix well. Fold in mayonnaise, mustard. Add rest of ingredients, mixing well. Must be kept cold. Prepare early so seasonings have time to blend flavors.

    Mustard Horseradish Potato Salad Recipe

    2 pounds red new potatoes, cut into eighths
    1/4 cup olive oil
    1/4 cup red wine vinegar
    1 clove garlic, chopped
    2 Tbsp sour cream
    1-1/2 tsp spicy brown mustard
    1-1/2 tsp bottled horseradish
    1 tsp sugar
    1/4 tsp salt
    1/8 tsp black pepper
    2 pounds fresh fennel or celery, trimmed and diced (about 3 cups)
    1/2 bunch green onions (about 3), trimmed and thinly sliced


    Instructions
    Cook potatoes in boiling lightly salted water until tender, about 20 minutes. Drain; refrigerate 1 hour.

    Whisk oil, vinegar, garlic, sour cream, mustard, horseradish, sugar, salt and pepper in a large bowl.

    When potatoes are cool, add to dressing along with fennel and green onions. Toss to combine.

    Yield: 6 servings

    Per serving: 198 calories, 4 g protein, 10 g fat, 23 g carbohydrates, 121 mg sodium, 2 mg cholesterol

    Potato Salad Southern French Style

    1 1/2 pounds boiling potatoes, cooked and peeled
    6 eggs, hard-boiled, peeled and chopped
    6 small ripe tomatoes, cored and quartered
    1 small red onion, sliced
    1/2 cup pitted black olives, sliced in half
    5 tablespoons capers
    Vinaigrette
    1/3 cup olive oil (more if needed)
    4 tablespoons tarragon vinegar (more if needed)
    1 tablespoon Dijon mustard
    salt and freshly ground black pepper to taste
    1. Cut the potatoes into dice size and place them in a good-size salad bowl. Add the chopped hard-boiled eggs, quartered tomatoes, sliced onion, olives, and capers.

    2. Prepare the vinaigrette by combing all the ingredients well. You may add more oil and/or vinegar as needed. Just before serving, pour the vinaigrette dressing over the vegetables. Toss gently and see that the vegetables are well coated. Check the seasonings and serve.

    Note: This is an excellent salad to serve during a friendly lunch or brunch.

    Caesar Potato Salad


    8 medium potatoes
    6 hard-cooked eggs (discard 4 egg yolks see below)
    1/4 cup chopped green onions
    2 stalks celery, chopped
    1 carrot, grated (1/4 cup)
    1/2 red pepper, chopped
    1/2 green pepper, chopped
    1/4 cup parsley, chopped
    1/3 cup mayonnaise
    1/3 cup sour cream
    1 tbsp. Dijon mustard
    1/2 tsp. Worcestershire sauce
    2 cloves garlic, crushed
    1/3 cup grated Parmesan cheese
    salt and pepper, to taste

    Boil potatoes in their skins until tender. Cool, peel and cut in 1-inch chunks. Boil eggs. Peel and cut in half. Discard 4 of the egg yolks. Chop remaining egg whites and 2 egg yolks coarsely. Combine all ingredients in a large mixing bowl and mix gently. Refrigerate before serving.

    Baked Potato Salad


    Ingredients:

    1 (16 oz.) carton light sour cream
    1(12 oz.) package bacon, crisply fried and crumbled
