    Pumpkin Trifle

    This is my mom's recipe that she loves to serve to a crowd. I don't make it, because my DH doesn't like pumpkin in any shape or form. So I enjoy eating this when I can. Do not need to make the whipped cream sweet, as the rest is sweet enough.

    Pumpkin Trifle

    3 cups crumbled spice cake or muffins
    ¼ tsp. allspice
    2 cups pumpkin
    2 ½ cups milk
    1 tsp. cinnamon
    ¼ tsp. ginger
    4 pkg. instant butterscotch pudding mix
    ¼ tsp. nutmeg
    2 cups whipping cream

    Set aside 1/4cup cake. Divide remaining cake into four portions; sprinkle one portion into the bottom of a trifle bowl. In large mixing bowl, combine pumpkin, spices, milk and pudding mixes; mix till smooth. Spoon half into the trifle bowl. Sprinkle with a second portion of cake.

    Whip cream till stiff; spoon half into trifle bowl. Sprinkle with a third portion of cake. Top with remaining pumpkin mixture, then last portion of cake and remaining whipped cream. Make crumbs of the ¼ cup cake and sprinkle around the edge of the trifle. Chill at least 2 hours.
