    Searching for old recipe

    Hey Ladies,
    As you know i haven't been here before except to read recipes. I have been looking for a recipe that my Grandmama made. She called it Mock Chicken. It was made with pork and chicken but I have no idea what else. She used to serve it on homemade rolls. Would anyone have any idea on this?

    City Chicken or Mock Chicken T & T

    2 lbs. boneless pork, cut into cubes - I use pork tenderloin
    1/2 c. flour
    1/2 tsp. garlic powder
    1/4 tsp. pepper
    1/4 c. butter
    3 tbl. vegetable oil
    1 envelope (dry) onion soup mix
    1 can (14 1/2 oz.) chicken broth
    1 c. water
    hot mashed potatoes
    small wooden skewers, soaked

    Thread pork on small wooden skewers. Combine flour, garlic powder and pepper on a plate. Roll kabobs in flour mixture until coated. In a large skillet, heat butter and oil over medium heat. Brown kabobs, turning frequently; drain. Sprinkle with soup mix. Add broth and water. Reduce heat; cover and simmer for 1 hour or until tender. Remove kabobs and keep warm. If desired, thicken the pan juices and serve over mashed potatoes with the kabobs.

    City Chicken with Beef and Pork

    Recipe for City Chicken, an old recipe from a time when chicken was expensive.

    1 1/2 lb. beef or veal
    1 1/2 lb. pork
    1 can cream of mushroom soup
    1 soup can of milk
    2 (4 oz.) cans mushrooms
    2 eggs, beaten
    Cornflakes crumbs
    Salt to taste
    Pepper to taste
    Oil to brown meat
    Wooden skewers

    Slice meat into 1 inch squares, about 1/4-inch thick. Alternately place meat on wooden skewers; (one pork, one veal etc.). Roll finished skewers first into eggs to which you have added salt and pepper; then into cornflake crumbs.

    Brown in skillet, being sure coating is well done. Place in casserole. Mix milk, soup and mushrooms together in pan dripping heat through, pour over meat in casserole. Bake covered at 300° for about 3 hours.

    Mock chicken

    As I am sure you know Mock chicken of any sort didn't come from the fact that chicken was a scarsity during the war years such as apples (loads of mock apple pie recipes.) It was actually the French and other European countries that introduced many Mock Recipes as a Cuisine Delight. Had nothing to do with the lack of chicken, apples, etc.

    Hope this helps you:

    MOCK CHICKEN RECIPE (ALSO CALLED: CITY CHICKEN)

    1 lb lean pork
    1 lb. boneless veal
    1 1/2 tsp. salt/pepper
    1 egg, beaten
    1/4 cup milk
    1/2 cup Ritz crackers (or any crackers)
    1/4 c. shortening
    1/2 c. bouillon

    Trim off excess fat from pork and cut both kinds of meat into 1 1/2 inch cubes. Stick skewers through the center of these cubes alternating pork and veal and using enough to fill skewers a little more than half full. Sprinkle salt and pepper over meat, then press into shape. Dip in egg diluted with milk. Then roll in cracker crumbs until well coated. Brown slowly on all sides in the hot shortening in a heavy skillet. Add bouillon and reduce heat. Cover and simmer slowly over low heat about 1 hour or until very tender. Make gravy from drippings, if desired, to serve with "legs"

    Yields: 5 - 6 servings.

    THICKEN GRAVY WITH FLOUR (2 TABLESPOONS FOR 1 CUP OF LIQUID.)

    Thanlk you all so much for responding. These recipes are making me hungry! But this isn't it. It's not the city chicken type thing it is more like a salad kind of thing that yu would put on a homemade bun. I keep thinking it had pork and chicken in it.

    mock chicken salad

    2 cup Diced cooked pork or veal
    1 cup Diced celery
    4 Ripe olives, chopped
    1 Pimento
    1 cup Boiled salad dressing
    Salt and pepper

    Combine meat, celery, olives, and 1/2 the pimento. Season to taste. Moisten with salad dressing. Mix lightly with 2 forks. Serve on crisp lettuce. Garnish with strips of pimento. 4 servings.
