My late pen pal gave me this recipe 30 years ago. It was from her family and when I got it, it was over 100 years old then. This recipe is so good and easy. Great to have on hand or for gift giving....

Banana Butter
makes 6 Half-Pints
In a large kettle, combine:
1/2 cup Lemon Juice
3 cups Sugar
1 teaspoon Butter
1/2 cup finely chopped Maraschino
Cherries
3 1/2 pounds ripe Bananas mashed to
4 cups
Mix well. Bring to a hard rolling boil. Stir constantly. Reduce heat simmering gently uncovered for 20 minutes, stirring constantly.
Ladle into hot half-pint jars, leaving 1/8-inch head space. Process in a water bater for 10 minutes.
Use as:
An accompyniment to ham or chicken.
Mix with a little barbeque sauce as and baste of meat.
On toast,pancakes, waffles, ice cream, cereal
Use your imagination!
My kids use to eat it out of the jar when I wasn't looking! It is easy and good. Great for gift giving....
