    Party Bread Toppings

    The small size loafs of rye and etc, that you can buy at Christmas. What kind of toppings can do you put on the bread. I bought a couple loafs, but don't know what to do with them. Thanks...Kathy Jo

    The old stand by of mixing a packet of Italian dressing mix with 8oz of softened cream cheese. Spread on bread, top with cucumber and sprinkle with dill. Another one we all like is a recipe I found in an old Taste of Home. I'll try to find it for you. It was Zucchini squares or something like that.

    Toasted Zucchini Snacks

    I added green pepper to this recipe I got years ago from a friend. I prepared this rich snack for company when zucchini is plentiful. Everyone seems to enjoy it—even those who say they don't care for zucchini. —Jane Bone, Cape Coral, Florida
    INGREDIENTS

    * 2 cups shredded zucchini
    * 1 teaspoon salt
    * 1/2 cup mayonnaise
    * 1/2 cup plain yogurt
    * 1/4 cup grated Parmesan cheese
    * 1/4 cup finely chopped green pepper
    * 4 green onions, thinly sliced
    * 1 garlic clove, minced
    * 1 teaspoon Worcestershire sauce
    * 1/4 teaspoon hot pepper sauce
    * 36 slices snack rye bread

    DIRECTIONS

    In a bowl, toss the zucchini and salt; let stand for 1 hour. Rinse and drain, pressing out excess liquid.
    Add the next eight ingredients; stir until combined. Spread a rounded teaspoonful on each slice of bread; place on a baking sheet.
    Bake at 375° for 10-12 minutes or until bubbly. Serve immediately. Yield: 3 dozen.

    Barb's Shrimp/Party Rye Appetizer

    Mix 1 cup Hellman's real mayonnaise
    Add 8 oz. Romano cheese or Parmesan cheese (or Shredded Swiss)
    3 green onions chopped
    Dash Worchestershire sauce
    Dash Soy sauce

    Mix together and then spread on each slice of cocktail rye bread. Top it with 1 large shrimp, (shell removed)

    Dash paprika..

    Broil until a little browned.

    Puffs up really nice and always a hit.

    Watch carefully so you do not burn..

    Mediterrean Sandwiches

    1 cup mayo
    8 oz. shredded Swiss Cheese
    6-8 slices cooked and crumbled bacon (can also use real bacon bits)
    1/4 c. chopped onions (can use green if you wish)
    1/2 cup chopped black olives
    2 loaves cocktail rye

    Mix ingredients together. Spread on cocktail rye.)

    Bake 375 degrees 5 to 10 minutes until melted or toasted brown.

    RYE & SWISS MELTS

    1 C grated Swiss cheese
    1 small onion (finely chopped)
    1 Tbls.worcestershire sauce
    Mayonnaise
    Paprika
    loaf of party rye or pumpernickel bread

    In a small bowl combine cheese, onion and worcestershire sauce; add enough mayo to coat and moisten mixture. Spread about a tbs. of cheese mixture onto bread and sprinkle with paprika. Broil (be sure to watch carefully, only takes a minute or two) until cheese melts.

    This is a great appetizer for any occasion. Enjoy!!

    Monterey Spinach Melts

    1 Pkg. (16-Oz.) cocktail bread rounds
    1/4 cup chopped onion
    1 small carrot, chopped
    1 garlic clove pressed
    1 pkg (9 oz.) frozen chopped spinach, thawed and drained really well
    1/4 cup mayonnaise
    1/4 cup sour cream
    salt and pepper to taste
    4 Oz. Monterey Jack cheese, thinly sliced

    Preheat oven to 375º.

    Combine all ingredients except bread and cheese in bowl. Spread spinach mixture on bread rounds. Place on large baking sheet. Place cheese on top of spinach mixtue, bake 10-12 minutes or until cheese is melted.

    Serve Immediately.

    Makes 20 mouthwatering appetizers.

    This is one I've saved. It was a little different since Reubens normally have corned beef.


    Miniature Reubens

    1 (11 oz.) package STOUFFER'S frozen Creamed Chipped Beef
    2 (8 oz.) cups shredded Swiss cheese
    1/2 cup sauerkraut well drained
    4 green onions minced
    1 large egg lightly beaten
    1 tablespoon Dijon mustard
    1/4 teaspoon garlic salt
    1/2 cup Thousand Island dressing
    28 rye or pumpernickel cocktail-size bread slices
    1 vegetable cooking spray

    THAW creamed chipped beef in microwave at MEDIUM (50% power) 6 to 7 minutes. Stir together creamed chipped beef, cheese, and next 5 ingredients. SPREAD Thousand Island dressing evenly over 1 side of each bread slice; top evenly with beef mixture. Place reubens on baking sheets coated with cooking spray.
    BAKE reubens at 375°F for 8 to 10 minutes or until puffed and golden.

    Swiss Cheese Appetizers
    From Wanda Key


    1 cup finely grated Swiss cheese
    1/4 cup cooked and crumbled bacon (about 6 slices)
    1/4 cup chopped ripe black olives
    1/4 cup minced green onions
    1 teaspoon Worcestershire sauce
    1/4 cup mayonnaise
    Pumpernickel or rye bread (about 16 slices)

    Preheat oven to 375 degrees. Cut bread into decorative shapes if desired. Mix together all ingredients and spread on bread. Bake 12 to 15 minutes or until browned.

    Hot Cheese & Beef on Rye


    1 pkg dried beef- cut into fine pieces
    1 cup shredded sharp cheddar cheese
    1/2 cup chopped black olives
    mayonnaise

    Mix first 3 ingredients with just enough mayonnaise so that ingredients stick together.
    Spread on party rye slices and brown under broiler until cheese melts.

    Cucumber Sandwiches.


    1 8oz cream cheese
    1/2 C. sour cream
    1/4 tsp. salt
    1/4 tsp. garlic powder
    (mix all together)


    spread lightly on party rye bread and then top with a thin cucumber slice and sprinkle w/dill. MMMmmm.


    You can cut them in 1/2.

    My Mini Hot Browns are a smaller version of the famous Hot Brown sandwich. Guests quickly saddle up for juicy turkey slices and crispy bacon, piled on toasted rye bread and then topped with a rich cheese sauce. —Annette Grahl Midway, Kentucky
    INGREDIENTS

    * 1 teaspoon chicken bouillon granules
    * 1/4 cup boiling water
    * 3 tablespoons butter
    * 2 tablespoons all-purpose flour
    * 3/4 cup half-and-half cream
    * 1 cup (4 ounces) shredded Swiss cheese
    * 18 slices snack rye bread
    * 6 ounces sliced deli turkey
    * 1 small onion, thinly sliced and separated into rings
    * 5 bacon strips, cooked and crumbled
    * 2 tablespoons minced fresh parsley

    DIRECTIONS

    In a small bowl, dissolve bouillon in water; set aside. In a small saucepan, melt butter over medium heat. Stir in flour until smooth; stir in cream and bouillon. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in cheese until melted. Remove from the heat.
    Place bread slices on two baking sheets. Layer each with turkey, onion and cheese sauce. Sprinkle with bacon. Bake at 350° for 10-12 minutes or until heated through. Sprinkle with parsley. Yield: 1-1/2 dozen.

    Baby Hot Browns

    24 slices pumpernickle miniature party rye rounds
    3 tbsp.butter or margarine
    3 tbsp.flour
    1/2 cup sharp cheddar cheese,shredded
    1 cup milk
    1 1/2 cups diced cooked turkey
    salt to taste
    1/4 tsp.cayenne pepper
    1/2 cup fresh grated parmesan cheese
    6 slices bacon,cooked,crumbled

    1-Place bread slices on lightly greased baking sheet

    2-Bake at 500-for 3-4 minutes,set aside

    3-In saucepan over low heat,melt butter
    4-Add flour,whisk continually until smooth
    5-Add cheddar cheese and whisk until cheese melts

    6-Gradually whisk in milk ,cook and whisk continually over medium heat until thick and bubbly

    7-Add turkey,salt,pepper,stir to combine

    8-Spread warm cheese sauce evenly over bread slices
    9-Sprinkle with parmesan cheese and bacon

    10-Bake at 500-for 2 minutes or until parmesan cheese is melted

    Serve hot.
