This recipe is so fast and awesome. Its almost too good to be true. I think I have posted it before, but cannot find it again. So I thought I'd repost it.
Speedy Corn Chowder
2 cans rotel tomatoes
2 cans chicken broth (14oz size)
1 can creamed corn
1 can mexicorn (I use 2 small cans of niblets instead)
1 lb. velveeta cubed.
Place all ingredients in a pan and simmer until cheese is melted. This stuff is GREAT for a cold winter night. And SO fast.
