    Cold Weather Comfort Food - Porcupines

    I love to make these in the CP because it's so no fuss. You can however bake, skillet brown or broil your meatballs before baking them in conventional oven too. 

    Porcupine Meatballs (Crock Pot)

    2 small cans tomato sauce -- use 1/4 cup for meatballs
    1 pound lean beef
    1 cup instant rice
    1 egg
    1/4 cup chopped onion
    1/2 teaspoon salt

    fresh ground pepper, to taste

    Sauce
    3/4 cup water
    1 16 ounce diced tomatoes
    remaining tomato sauce
    dash garlic powder
    2 shakes worcestershire sauce
    1 tablespoon sugar

    Make meatballs with first 7 ingredients.

    Shape meatballs and place in crock pot on high for one to two hours, till set.

    To make sauce, combine last 5 ingredients, plus remaining tomato sauce, bring to boil, reduce heat and simmer for at least 30 mins.

    Pour sauce over all and continue to cook on low for 4 hours.

    Delicious with homemade mashed potatoes.

    Love porcupines in the winter. I make mine in the pressure cooker. Any way you cook them, they are great.

    I don't have a pressure cooker but I've heard that you can make lots of great things in them. We are having the porcupines with mashed potatoes and corn for supper tonight. It's been a dark cold rainy day here. Perfect for comfort food.

    These really sound good.  Love the idea of being able to fix these in crockpot.  Thanks for sharing.

    Yummy!! Sounds good!.........does anyone know how to get this recipe to my recipe box? I'm new at this stuff and the "help" didn't help! LOL

    Wanted to give this recipe a Yes! The only changes I made was, I didn't have tomato sauce, so I used spagetti sauce, and I omitted the diced tomatos.

    This is one of our favorites too, DS requests this for his birthday supper!  I make my meatballs with a little onion, egg, bread crumbs or oatmeal, and minute rice, salt and pepper, brown them a bit, and then I just add a can of tomato soup with water and more rice.  I cover and simmer this about 20 min or so until the rice is done.

     How ironic, I made porcupines for dinner but with tomato soup in the skillet. They were so good. I haven't had them since I was a little girl.
