    Daily Low Carb Chat Dec 13 ( Albany)

    Good morning!

     

    Well, we're battening down the hatches for our first snow storm. Not supposed to be too bad, but I do thave things I must do, so it'll be a nuisance.....darn!

    This weekend we're supposed to get a Nor'eastern, which may bring a lot more snow this way. We had a trip planned to NYC, and my brother and SIL are planning to come up from NJ, so maybe everything will be cancelled...rats.

    But...I'll get some stuff done early here....we'll have a simple supper tonight...burgers, mashed cauliflower and a salad.

    Good morning Margaret & all ~

    Yep!  We're battening down too.  It's suppose to start this morning and then we're in for it again on the weekend.  They are calling for 3-5 north of I-90, but south we could get up to 10".  We're located somewhere in between.  I have a bunch of running around to do today too.  I don't mind the snow too much as long as I get my Christmas shopping done & I can get up my driveway.  I hate to keep having someone come to plow it.

    I at least made a dent in the Christmas shopping yesterday.  One more trip ought to do it.  I found some sausage in the freezer this morning so I think I cook that up w/ some peppers & onions, put it in some spaghetti sauce & put it over some dreamfields.  Yum... I'm making myself hungry and it's only 8:30.

    Guess they haven't gotten the time fixed yet, unless you were up very early this morning, Margaret.

    Will try & check back later.  I really need to fool around & see what this new BB actually does.  Enjoy your day!

    Good Morning Margaret and Barb,

     

    We are waiting for DD and the kids to come Haak has a check up today. DH and I are getting our hair cut later today so it's a busy day for us.

     

    I took some steaks out and have them coming to room temp and we will have them for a late lunch I think. I have some broccoli salad to go with them so that will be tasty.

     

    I don't know if there is anyone else but you two that are in the line of fire for this storm but do becareful everyone. We are having a little warmer weather today.

     Good Morning girls!

    I've got lots of work to do today, but wanted to stop in and say hello first. I think I will be fixing fish for supper with some deviled eggs and cauliflower or green beans. Something easy. I also have some left over Taco salad so might do that too.....don't know for sure Smile

    Margaret, I hope your family will still be able to come visit today. Sometimes the weather men goof it up....so lets hope they are wrong!

    Barb, sounds like you and Margaret are really in for some winter weather. So I hope that you were able to get out early and get your shopping done. The sound of your supper made my mouth water! 

    Carol, enjoy your visit today with your kids and grandkids. Hope Haak check up turns out well.

     Here's a recipe that I found and it sounds pretty good to me.

    Lemony Chicken

    1 1/2 lb. chicken breast, skinned, fat removed

    1/2 cup fresh lemon juice

    2 Tbsp. white wine vinegar

    1/2 cup fresh lemon peel, sliced

    1 medium onion, sliced

    3 tsp. fresh oregano, chopped OR 1 tsp. dried oregano

    1/4 tsp. salt

    1/2 tsp. paprika

    Add black pepper to taste 

    *Place chicken in a 13 x 9 x 2 inch glass baking dish.

     *Mix lemon juice, vinegar, lemon peel, onions, and oregano. Pour over chicekn, cover and marinate in refrigerator several hours, turning occasionally, or overnight.

    *Sprinkle with salt, pepper and paprika.

    *Cover and bake at 300 degrees ro 30 minutes. Uncover and bake for another 30 minutes or until done.

    Nutritions facts: (per one breast) 179 calories, 4 grams fat, 8 grams carbohydrates, 2 grams fiber, 28 grams protein, 222 mg. sodium, 350 mg. potassium.

    This is making me nuts!  I wonder if there is a way to see the whole L/C post.  I used to keep going back to remind me who & what I wanted to post to each person.  Doesn't seem you can do that anymore.

    Have fun with your kids Carol.  I had a couple of mine overnight last Friday & I want to tell you that by the time they left the next day, I was pooped!

    Your dinner sounds good too, Linda.  I LOVE fish & was almost going to have it tonight too, but I came across the sausage & decided that sounded better.  Actually I would have preferred chili, but I didn't have any ground beef. 

    Just got word from Hubby that they have issued a travel advisory in our county - no unnecessary travel.  It's coming down like crazy.  I may have to rethink the chili.  Hubby said he was going to be in & out tonight & I have to stop & get some laundry detergent, so I may just buy that ground beef & make the chili.  Am I flexible or WHAT!!!!

     I know Barb! I HATE the fact that when I'm responding to this...I can't see anybody elses posts and I just can't remember everything that the others have said!! Drives me nuts too. Cause I care about everybody and what is going on with them..... I really hate that part of it.

    I do hope that you and Margaret can get what you need in now and then just stay all nice and cozy in your homes until the streets are all nice and clear again.  I will be thinking of you both.

    Can you all see the recipe that I posted or not?  I tagged it a main dish so I am hoping it will be visible to you all.  Why didn't they just leave it like it was?!!!!!!

     I found this recipe on the bb.....not sure how I found the bb though. hahahaha

    Does it sound low carb to you guys??

     RANCH BACON CHEESY CHICKEN

    1 bag 3 pounds boneless chicken breasts, thawed and browned

    1 bottle Ranch Bacon Dressing, not quite the whole bottle

    1/2 cup real bacon bits provolone cheese - a slice for each piece of chicken

    Brown chicken on each side, put in 9 x 13 casserole dish. Pour Ranch Bacon Dressing over each piece, top with a piece of provolone cheese. Sprinkle bacon bits on top. Bake at 350º 45-50 minutes.
