Anise Extract...How does it taste?

    Anise Extract...How does it taste?

    Does it taste like that black licorice candy? I can't imagine that being good in a cookie...is it?

    I've seen several recipes that call for anise extract, but I don't want to use it and have to throw them away. Are recipes that call for anise extract really better when you use the anise, or can you use a different extract?

    I'd like opinions on anise extract, please. What is your experience in using it?

    it is good in pumpkin bread.......it is a very strong flavor so be careful how much you use in a recipe, until you are sure you like it.

    It is good, but until you know you like it only make a smal test batch of whatevr you want to make.  I is cheaper to throw o a little batch than a big one

    Yes, it does kinda taste like black licorice- personally I think it's grea but not everybody does.  During the holidays some peopl use it in hard candy that is red and that is good too!....

    I love the taste of anise,but as Jet says,start with I small amount in your cookie recipe. Some of the German Christmas cookies have anise in them and I could not imagine the cookies without the anise. I don't think you would have to throw them away,somebody will like them.

    I use just a touch in my Rosette cookie batter. It gives the cookies a wonderful taste.I have also had Anise in pizzelles before and they were delicious and not strong at all.

    There is a german cookie called peffernuse (though I don't know how to spell it) sometimes the recipe will be called peppernuts. Its a small hard (crunchy) spicy cookie. I make them for Christmas, I have a good recipe but I have had trouble fining it lately.

    Amy, I don't think the Peffernesse have any anise in them,but the little bit of pepper is a must.In case you can not find your recipe,we posted lots of them on the Old Country Corner,former german Corner,or I can pull it up for you. Renate

    Anise has a wonderful flavor.  Here's a great cooking recipe using anise extract.  But, as the others suggested, start with a small batch to see if you like the taste.

    COOKIES:
    4 eggs
    2 c. sugar
    6 c. flour
    1 c. milk
    3/4 c. Crisco oil
    1/2 tsp. salt
    2 tbsp. anise extract
    6 tbsp. baking powder
    FROSTING:
    Butter
    Confectioners' sugar
    Milk
    Beat eggs; add sugar, oil, salt and anise extract. Add flour, baking powder and then add milk while mixing. Roll mixture into 1 inch balls. (Flour hands first as dough will be sticky.) Bake at 375 degrees for 7 to 10 minutes or until bottom are lightly browned. When cool, frost. Mix all frosting ingredients until consistency to dip cookies.
