    Do any of you good cooks make your own breakfast sausage?

    My sister called this morning. She had been to the Public Market and got 5 lbs.of fresh ground pork. She'd like to make homemade breakfast sausage. Does anyone have a tried and true recipe that they might be willing to share?

    I do the same thing.  I just add Morton Sausage and Meatloaf Seasoning Mix.  I use 1-1/2 tsp. of seasoning per pound.  More or less if you prefer  DO NOT add a level tablespoon per ground pound as indicated on the bottle.  It's WAY too much salt.  Also, if she likes more flavor, of say sage, add extra sage (even though it's in the mix already).

                             Spiced Breakfast Sausage

    Recipe By     :
    Serving Size  : 8     Preparation Time :0:05
    Categories    : Sausage

      Amount  Measure       Ingredient -- Preparation Method
    --------  ------------  --------------------------------
      1           teaspoon  ground sage
         1/2      teaspoon  dried savory
         1/4      teaspoon  ground black pepper
         1/4      teaspoon  nutmeg
         1/2      teaspoon  salt
         1/4      teaspoon  ground cloves
         1/4      teaspoon  ground mace
      1              pound  lean ground pork

    Thoroughly mix seasonings into ground pork. Shape into patties and brown or crumble and fry for use in a recipe.

    Here's one I changed to use 5 lbs of meat so the amounts are right for that but the directions are for 1 lb.  This is tasty sausage!

                                Breakfast sausage

      Amount  Measure       Ingredient -- Preparation Method
    --------  ------------  --------------------------------
      5             pounds  ground pork
      5          teaspoons  rubbed sage
      2 1/2      teaspoons  black pepper
      1 1/4      teaspoons  Dried Crushed Red Pepper
                            Vegetable Cooking Spray

    Combine first 4 ingredients; shape into eight (2-ounce) patties. Coat a nonstick skillet with cooking spray; place over medium heat until hot. Cook sausage patties 3 minutes on each side or until browned.   Yield: 4 servings

    Sage Sausage:
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon dried parsley
    1/4 teaspoon rubbed sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon dried thyme
    1/4 teaspoon crushed red pepper
    1/4 teaspoon coriander
    1/4 teaspoon MSG (Accent)

    Hot Sausage:
    16 ounces ground pork
    1 teaspoon salt
    1/2 teaspoon cayenne pepper
    1/4 teaspoon rubbed sage
    1/4 teaspoon ground black pepper
    1/4 teaspoon crushed red pepper
    1/4 teaspoon coriander
    1/4 teaspoon MSG (Accent)

    Maple Sausage:
    16 ounces ground pork
    3 tablespoons maple flavored syrup
    1 teaspoon salt
    1/2 teaspoon MSG (Accent)
    1/4 teaspoon coriander

    Combine all ingredients for the flavor of your choice in a medium
    bowl. Form the sausage into patties and cook in a skillet over medium
    heat until brown. Each recipe makes 1 pound of sausage.

    et fresh pork, make these and freeze them in patties.

    Hummmmmm, not since Bigmother died, but since i've checked out these recipes, I may have to start making it againSmile especially the sage and maple suryp ones, I have some great Vermont maple syrup that would be oh so good in some.
